BANANA CRUMB CAKE

Baked this Egg Free Banana Crumb Cake for brunch or as a dessert.  I had some overly ripe bananas sitting on my kitchen counter.

This recipe is a perfect way to clear those bananas. It isn't a fancy cake but a moist and crumbly cake, full of flavor. This Banana Crumb Cake was lighter  than a typical banana cake. What makes this cake so special was the addition of  luscious crumb topping.

This cake was  perfect for a small gathering, it was easily completed in one sitting!

BANANA CRUMB CAKE
Yield    :   7 in round cake

1 cup self raising flour
1/2 cup sugar
3 medium banana mashed
2 tablespoon oil/melted butter
1/4 cup water/milk

CRUMB TOPPING
2 tablespoon all purpose flour
2 tablespoon brown sugar
1.5 tablespoon butter

METHOD

Preheat oven @ 180 C and lightly grease 7 in round pan.

Combine flour, butter and brown sugar for the topping with a fork until you have peas size crumbs. Set aside.

Combine sugar and flour in a mixing bowl.

Add in banana, oil and water/milk  to the dry ingredients.

Mix until just combined and pour into prepared pan. Smooth the surface with spatula.

Sprinkle the crumb topping evenly over the batter.

Bake for 25 minutes or until a skewer inserted comes out clean.

Leave in the pan for 10 minutes, transfer onto rack to cool.

You make some unbelievable eggless cakes! I always end up with at least two overripe bananas so thanks for a tasty use for them. I usually just throw them in a smoothie, but I like this idea better.
