A wonderful and healthier  way to enjoy potato wedges  is  by baking  them in an oven.

I have boiled them for 5 minutes or about 3.4 cooked prior to baking.   Prick with fork to see Baked Potato Wedges are done. We would complete the process by baking them.   With this method it allows you to reduce  cooking time.

These Baked Potato Wedges have some heat due to the addition of pepper and chili powder.  If you are serving small kid, you may reduce or omit those altogether.

BAKED POTATO WEDGES RECIPE
Serves  :  4

4 medium potato, peeled & cut into wedges
1 tsp salt
2 tablespoon oil
3/4 tsp ground pepper
3/4 tsp chili powder
3 tablespoon corn flour
1/2 tsp mixed spice

DIRECTIONS

Peel  the potato, cut into 8 wedges for each potato.  Wash and drain.

Place the potato in a deep pot,  fully cover the potato with  salt and water.  Boil for 5 minutes or until 3.4 cooked.

Drain and cool completely.

In a bowl, coat the potato with oil. pepper, chili powder, corn flour and mixed spices.

Preheat oven at 180 C for 10 minutes and grease your baking  tray.

Place potato in single layer on baking sheet.  Bake for 20 minutes ,  flipping in between.

Remove and sprinkle with salt if needed.
