KITCHREE (SPICED YELLOW DAL WITH RICE) RECIPE

A combination of rice and yellow lentils  make this a nutritious meal. I serve  my  Kitchree or Kitchari  with Ayam Masak Merah (Chicken in Spicy Red Sauce),

You can  make this rice on stove top  following my  recipe below or use rice cooker.

For rice cooker, fill your cooker with water, milk, yogurt, salt and turmeric and bring to boil by pressing the 'cook' button.  In a separate pan, heat the ghee, fry onion,  cinnamon, cardamom,, cloves, ginger and garlic till fragrant.

Once the water is boiling, add in rice, lentils and the fried  spices.  close lid.  You need not worry about burnt rice, the rice cooker would take care  for you.

AYAM MASAK MERAH / CHICKEN IN SPICY RED SAUCE

This chicken is cooked in a spicy red sauce that was a popular choice here. Ayam Masak Merah / Chicken in Spicy Red Sauce  got its color from chili paste, chili sauce and tomato sauce. .

Before you start, prepare the chicken by coating with turmeric and salt  then fry until half done.

Also get ready those  ground ingredient.  Cut dried  chili into small pieces, wash and boil .  Drain then grind into smooth paste together with ginger and garlic.

Have added a cup of water but this depends how thick you want the gravy to be.

You can use white sugar instead of brown sugar as brown sugar makes this Ayam Masak Merah / Chicken in Spicy Red Sauce a bit dark in color..

One of most famous cakes was Kek Kukus (Steamed Fruit Cake) that has been baked for more than 50 year despite emergence  of modern cake.

Most older cake recipes were time consuming  to  prepare like Kek Kukus (Steamed Fruit Cake), it requires 4 hours of steaming and Honeycomb Cake needs 3 hours resting time before baking.   So plan wisely before you start.

Pleasantly buttery and slightly crunchy cookies.  It uses clarified butter (ghee).  It will remains white after baking.  Place them 1 in apart as these expand while baking

Basically these are buttery, melt in the mouth butter cookies.  It was pretty laid on a plate due to its lovely shape made with special mold or use  a cookie press.  It is a bit tricky to make the dough,  too soft turns the cookies flat

One of seasonal favorites,   commonly stuffed with pineapple,  but I have made slight changes by filling it with pitted date.  The beauty of these tart was pinching the sides with tart pinchers

A traditional biscuit made with ghee.  It was melt in the mouth usually shape like a leaf, stuffed with crushed peanut and icing sugar.  Nowadays, it is shaped into a small ball coated with icing sugar
