Chicken Biryani Recipe @

Festive season is incomplete without gathering to enjoy good food. This is the time to meet and mingle with our immediate family members as well as our close relatives.

One of the most popular choice to serve during special occasion was Chicken Biryani.  An aromatic dish combining rice and chicken in one single pot.

There are so many variety of biryani made with chicken, meat and poultry.  They differ from one another due to special spices used and the way it was made.

This Chicken Biryani requires marinating the chicken with yogurt, ginger, garlic and spices.  It is best if you can marinate it longer so this allows chicken  to absorb all the flavor.

As for chili powder and green chili, adjust to your preference.    Do fry the onion until it turns golden brown, this will take some time so be patient. .

Chicken Korma Recipe  @

There are various ways to cook Chicken Korma, it can  be richer with cream / coconut or lighter without those addition.  Make it even lighter by removing the skin and trim all fats from the chicken before cutting into 10-12 pieces..

Chicken Korma Without Coconut was  a family favorite.  We love to serve this dish over Dry Fruit Naan. or  Ghee Rice / Corn Peas Pulao.  Chicken Korma has a strong Persian influence.   Traditionally chicken is braised and the sauce thickened using ground nuts.

In restaurant, it is often full of fat (cream, butter and creamed coconut). Instead I have created  a creamy texture by using low fat evaporated milk and thickening the sauce using ground almonds.

This recipe is versatile, you can use most meat, fish or vegetables instead of chicken.  Have added 2 cups of water but this is entirely up to you, this depends on how thick you want you gravy to be.

Cake recipes @

Fruit Cake made their appearance during festive celebrations such as Christmas, Hari Raya  and even Chinese New Year.  There are few types of fruit cake either steamed or baked and the dry fruit used varies in quantity, some soaked in brandy/orange juice or without soaking -  the fruit is coated with flour before adding to the  butter mixture.

I always love  Fruit Cake that uses less dry fruit in the recipe.  This Light Fruit Cake require you to soak the dry fruit in  orange juice or brandy overnight.   Next day you can proceed to bake the cake.

It took more than an hour to bake mine.   In case the top  of this Light Fruit Cake  becoming too brown, cover with aluminium foil  crimped around the edges of your baking pan.

Cake  recipe @

I always love simple butter cake without  any frosting.  But will experiment with different flavors or add ins for a little "twist".   So here is my first attempt on making Oreo Butter Cake

Actually you can use any of your favorite butter cake  recipe.  Make it different by adding quartered oreo in the batter.  If you want, you can also  crush the cookies.   Have seen some bakers sandwiched whole oreo in between of the cake batter.  Either way, they still turned out delicious.

High in fat, butter cake will keep well for several days.  Un-iced,  a well wrapped baked cake will keep well in the freezer for 1-2 months.

Butter Cake w/Chocolate Sprinkles

This Butter Cake with Chocolate Sprinkles is not an overly sweet cake. Importantly it was super easy to make, This butter cake is for a moist, light cake that's wonderful as it is but can be used as the basic recipe for 3 other good cake - orange, walnut and chocolate cake with slight adjustments.

If you're not a fan of sprinkles, you can leave that out and still it turned out great.  Use a mixer to blend the batter well but  I  used my hand held beater to do the job.

Did you notice that this cake is baked using slow temperature (160 C) and baked at longer time (40-45 minutes),  When you used high heat it tends to crack on top

Marble Cake Recipe @

I baked this Marble Cake made from simple butter cake with a little twist.   Turned this into marble cake by adding two striking colors, red and green. The color combination is entirely up to you, use 2 or 4 colors if you want.

Accidentally add too much green color to the cake batter so it turns out darker deep tone luckily that doesn't alter its taste.

Cube the butter right after you have removed from the speed up the creaming process.

In case you have self raising flour, use it  but omit the baking powder.

Dry Fruit Bundt Cake

There are many variations of fruit cake,  including a version that require soaking of the fruit for days while another one  need you to boil the dry fruits and butter.

Am sharing with  you a  really quick and easy Dry Fruit Bundt Cake and  one of the ingredients was condensed milk.  Using condensed milk in a fruit cake is a new one for me but it always fun to try. Dry Fruit Bundt Cake  is also made without sugar.

If you need to avoid egg, you can substitute with plain yogurt or pureed fruit.

I find it easier to slice without it breaking so easily because the fruits remain soft and stick together. You can  easily increase the mixed fruit up to 1 cup if desired.

Chocolate Crinkle Cookies from scratch

These Chocolate Crinkle Cookies are on my "to do" list for a long time. They are crisp on the outside
but  chewy in the center and ridiculously easy to make.

If you're a chocolate lover, you're going to love these cookies. They have deep chocolate flavor.

I suppose to  roll the cookies in confectioners sugar for that pretty crack on top but last minute, I could not find my powdered sugar so have coated them with fine sugar.

Make sure to place the rolled cookies 1 in apart, as they bake, they spread and the surface cracks.

You can turn the same recipe into Red Velvet Crinkle Cookies by adding a tablespoon of red food coloring to the flour mixture.

Chocolate Crinkle Cookies from scratch

Yield  :  45 coolies

1 and 2/3 cup all purpose flour
1/3 cup cocoa powder
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 tablespoon buttermilk
1/2 cup melted butter
1 cup sugar
1 egg or 1/4 cup yogurt
1 tsp vanilla essence
confectioners sugar for rolling


Sift together flour, cocoa, baking powder, baking soda and salt in a mixing bowl.

Beat butter and sugar until well blended, mix in buttermilk, egg/ yogurt and vanilla essence.

Add in butter mixture into dry ingredients, mix to form into soft dough.

Cover and refrigerate for an hour.

Place confectioners sugar in a plate.   Start rolling the mixture into 1 in balls.

Roll these balls in confectioners sugar and place them in 1 in apart on baking sheet.  Preheat oven @ 180 C.

Bake for 10-12 minutes until slightly firm.  Let sit in the pan for 5 minutes before transferring them onto rack to cool.

Chocolate Cake with Chocolate Frosting

Am so excited to share my  first experience making this Chocolate Cake with Chocolate Frosting. This is a wonderful recipe made from scratch and  truly easy to put together.

Chocolate cake w/Chocolate Frosting can be made with or without egg.  Besides sour cream as an egg substitution, you can use banana or pureed fruit.

Please check the cake after 40 minutes of baking since  the oven varies from one another. I have used an easy chocolate frosting that you can prepare  really quickly but chocolate ganache  or  butter cream work too.

Chocolate Cake w/Chocolate Frosting

Serves  :  8

1 3/4 cup plain flour
1/2 cup melted butter
3 tablespoon cocoa powder
1 1/4 cup sugar
1/2 tsp baking soda
1/2 tsp baking powder
1 1/4 cup milk
1 egg or 1/4 cup sour cream
1 tsp vanilla essence


3/4   cup condensed milk
2 tablespoon melted butter
1/2 cup cocoa powder

Melt the butter in small saucepan, using medium heat, add in condensed milk and cocoa powder.  Stir until thick  remove from heat

Chocolate Cake w/Chocolate Frosting


Preheat oven  @ 180 C and great 8 in cake tin.

Sift together flour, cocoa, baking powder and baking soda.

Mix in sugar, make a well in the center, stir in melted butter, milk, lightly beaten sour cream or egg and vanilla, stir until well incorporated.

Spoon  batter onto prepared pan an bake for 40-50 minutes or until a skewer inserted comes out clean.

Sit in pan for  10  minutes before transferring onto rack to cool.

Place cake on a plate, pour the  chocolate frosting over the cake. Enjoy...

Nutella Popsicles

One of the frozen  treats that the kid will  enjoy is popsicle.  Making them in your own home was so much fun especially  when you get your kid involves in this activity.

There are tons of recipes for pospsicle to choose from, whether you want egg free, without ice cream maker, fruity or  no cook types.  For the start this Nutella Popsicles  is my choice, only 3 ingredients and egg free.

The preparation was super easy, just dump all ingredients in a blender, process until smooth.  In case you do not have a blender, make use of a whisk to blend.

I made mine without popsicle mould by pouring the mixture onto  a goblet and covet top with plastic wrap.  The quantity  can easily  be doubled or tripled as per your requirement..

Nutella Popsicles

Serves   3

3/4  cup cold milk
1/4  cup condensed  milk
2 tablespoon nutella spread


1.  Place milk, condensed milk and nutella in a blender.   Process  until  well  mixed.

2.  Pour mixture onto popsicle mould / other suitable container and freeze for  4-6  hours or overnight.

3.  Cover top with plastic wrap if you do not have a lid before freezing.

Broken Glass Jelly with agar agar powder

A very blessed Eid  to  you and family,  to those celebrating.  May you be showered with joy and happiness!

This year am not making any heavy preparation since I had just recovered from my illness.  I picked up  agar agar powder to prepare this Broken Glass Jelly.

This is the simplest dessert you can make without much effort but still looks terrific.  What I did was mixing the agar agar powder with sugar in a deep pot  until the  agar agar is dissolved.  Bring to boil  over low heat, stirring  all the time.

And now this is a fun part.  Divide into 4 parts.  Mix 3 parts with your favorite color and leave the balance as it is.  Let them set , now you can cut the colored parts into cubes and place them in a  9 in tray.  Mix them altogether.

Heat the non colored part over low heat, add  milk.  Remove from heat, pour this mixture over the tray filled with colored cubes.  Cool slightly, place the tray in a refrigerator to set fully.

Broken Glass Jelly


10 g  white agar agar powder
250 g white sugar
1 liter water
3 tablespoon condensed  milk
3 different color of food coloring


1.  Dissolve agar agar powder in one liter of water, stir well.

2.  Add sugar, stir and bring to boil over low heat.

3.  Remove from heat, rinse 3 containers, place 1 1/4 cup of agar agar on each container, add coloring to each, stir until well mixed.  Chill in a refrigerator..

4.  Rinse  9  in tray, cut into cubes for the colored parts.  Place them in a tray, mix altogether.

5.  Heat the plain part, add the condensed   milk.  Remove and pour this over the colored cubes.

6.  Cool slightly and let it set in a refrigerator.  Cut into desired sizes to serve.

With the temperature rising, it's time for a refreshing dessert. made of agar agar.   This  low calorie agar2 is derived from  natural water soluble fiber with no fat or starch.

Coconut Cream Agar  is simple to prepare and much healthier than the egg and cream type. What you need is to stir the mixture of agar2 powder, sugar and coconut milk until boiling and thicken, pour into your favorite mould and once it comes to room temperature place them in a refrigerator to chill.

Beside coconut milk, you can add canned fruit, corn, cocoa or even fruit juice to the jelly, the choice is endless, just use your imagination to explore this versatile dessert.


Yield  :  12

12 g agar2 powder
1 liter water
230 g sugar (I used orange colored sugar)
200 ml coconut cream
food coloring if needed
jelly mould


* Dissolve the agar2 powder with one liter of water in a deep pot.

* Add sugar and bring to boil, stirring constantly, add a drop of food coloring if needed, mixed well.

* Now add the coconut cream and bring to boil again.

* Pour into rinsed jelly mould and let them come to room temperature.

* Place the jelly in a refrigerator to cool.

* Serve cool.

Roti Boyan (Bawean) is a popular snack made with flaky pastry and stuffed with mashed potato.  It is a sort of cross between a samosa and empanada. It is most probably created by Baweanese  -  they are from an island in East Java, Indonesia.

It is either shaped into round or square, deep or shallow  fried  until crispy and golden. Roti Boyan is usually found and sold at roadside stalls.

Like most pastry recipes, the quantity of liquid is very important so take care  to add the water gradually until a pliable dough is formed.

Another important factor, heat the oil  to the proper temperature and maintain it throughout the cooking process.   If it is not hot enough, it will soak up extra oil.

If you're  allergic to eggs, simply omit them but sprinkle some water to the mashed potato just to bind them.

Also sprinkle some salt when heating the oil.  I noticed  my Roti Boyan   does not absorb excess  oil.

Yield   :   6

4 cups plain flour
1/4 cup oil
1 tsp salt
1 cup warm water


Place flour and oil in a mixing bowl.

Add in salt and gradually add water to form a soft dough. Knead until smooth.

600 g potato boiled and mashed (I used 4 russet potato)
2 big onion chopped
1 egg lightly beaten
1 tsp salt
handful cilantro chopped
4 green chili chopped
1/2 tsp ground pepper


Mix all the above ingredients.  Keep refrigerated until ready to use.


Divide dough into 12 small balls.

Roll out each ball into 6 in diameter.  Place filling in the center, cover with another disc of dough.

Crimp the edges and complete the rest of the dough.

Heat sufficient oil in a pan, when fully heated, slide in one roti at a time. When it turns golden brown, flip and cook the other side.

Remove, cool slightly and serve with sambal tumis or chili sauce.


4 cawan tepung
1/4 cawan minyak
1 st garam
1 cawan air suam

Satukan semua bahan di dalam mangkok kecuali air..  Campurkan air sedikit
 demi sedikit hingga jadi doh.

600g kentang di rebus dan lecek
2 biji bawang besar di cincang
1 biji telur di pukul
1 sudu teh garam
4 batang cili hijau hiris halus
1.2 sudu teh lada putih
daun ketumbar di hiris halus


Satukan semua bahan hingga rata.  Simpan  di dalam peti sejuk.


Bahagi doh kepada 12 bebola.  Gelek tiap satu 6 in garis pusat.  Letak inti di tengah, tutup dengan satu lagi doh yang sudah di gelek.  Kelim tepi nya supaya tidak terburai ketika di goreng,   Panaskan minyak secukupnya,   goreng roti hingga kuning,  terbalekkan dan goreng yang sebelah lagi. Angkat dan goreng hingga habis.

Sometimes we love to skip our regular diet by having  various type of noodles, flat bread or even pasta. For today, I'm going to cook my favorite Chicken Noodle Soup.

My recipe was a bit different since I have added bird's eye chili,  to make it spicier and ground almond for slight nuttiness to the soup. This is the most loved chicken soup by my family.

Whenever I cooked any chicken dish, I make sure to remove the skin and excessive fat hidden in between the flesh. You can always ask the poultry seller to remove the skin and cut the chicken according to your requirement, how big you want it to be.

In addition of cooked noodle, you  can make this heavenly soup with pasta or rice cake (lontong) too. You can  control the spice of this Spicy Chicken Noodle Soup by adding more or less chili and also modify the vegetables  to your preference.

Instead of serving the chicken as it is, you can shred the chicken with your fingers as you pick it off the bone. Simply pull the meat apart into chunks.

Warm the belly and heart with  a big bowl of  Spicy Chicken  Noodle  Soup.  This endless  customized recipe is healthy addition to any meal or a great centerpiece  dish in its own right.

Servings     :    4-6

600 g fresh yellow noodle/rice noodle
2 carrot peeled and thickly sliced
2 potato peeled and cubed
3 tsp ground coriander
1 tsp ground cumin
1 tsp ground fennel
1/2  tsp turmeric
1 stalk lemon grass bruised
4 whole almond  ground
10 bird's eye chili or 1 tsp ground pepper
2 big onion chopped
2  big onion sliced and fried till  crisp
2 cloves garlic minced
1 thick slice ginger
6 cups water
salt to taste
chopped cilantro
1.75 kg chicken pieces  with bone still in
2 tablespoon oil


Heat the oil in a deep pot, add in lemon grass and onion  fry until it turns translucent.

Add in coriander. cumin. fennel, turmeric,  ginger, garlic,  bird's eye chili and little water, cook until fragrant.

Now add the ground almond and chicken pieces, stir until chicken is coated with spices.

Add 6 cups of water, carrot and salt, let simmer until chicken is half cooked.

Now add the potato, continue cooking until potato turns soft and chicken is fully cooked. Check if more salt is needed.

Remove from heat. Bring a large pot of water to boil,  When water is boiling, put in noodles, let  cook   for 3-5 minutes (this is for fresh noodle). If using dried noodle, cook it longer.  Strain.

To serve, put the noodles in a bowl, add soup and garnish with fried onion and chopped cilantro.

Who can resist Chocolate Fudge Slice? This recipe was foolproof and pretty darn simple - just basic ingredients and egg free. It's better than any fudge I've ever tried.

I used 11 x 7 in rectangle pan, lightly buttered. The Chocolate Fudge Slice was easy to cut and remove from the pan. It's chocolatey and sweet enough to satisfy my cravings.

Meanwhile, a lot of vegetarian cookery books rely heavily  on eggs, especially for cakes, pastries and pudding. These recipes can be replaced  and the following should provide some ideas.

Eggs are used to bind a dish, when whipped, may  also incorporate air  making a cake very light. Many recipes can be adapted using one of the suggestions below.

Instead of one egg, you can use::

1 medium  mashed banana
1/4 cup apple sauce or pureed fruit  (avocado, pumpkin, squash)
1 tablespoon ground  flax seed + 3 tablespoon of warm water. Let stand 5 minute before using
1/4 cup pureed tofu

Stir Fried Pasta

Once a while we love to eat pasta especially a stir fried ones. We will devour any kind of  pasta  that is long and spicy. While we do have a typical pasta sometimes I mix things up with pasta from different countries. I make sure they have more fiber and other nutrients.

You can always use less chili paste for a  milder version.  Anyway, we like ours to be super spicy, in fact I had used bird's eye chili for this recipe.

This meal is delicious and ready in minutes.  Feel free to substitute any type of meat or vegetables to this dish or skip the meat altogether.

The intense lemon flavor and delicate texture of this Eggless  Lemon Tart make it a perfect ending for any meal. Made from scratch, the crust contains less fat than a regular recipe.

Since I really wanted something easy to make that was sweet and bursting with tangy  lemon flavors, I settled on this Eggless  Lemon Tart. It is also an egg free recipe for the filling as well as  for the pastry.

I tried it, my family tried it. We all agreed that it came out pretty darn tasty. It had zing. The only thing that it did not have was a lot of colors for that I have used one or two drops of yellow food coloring in the filling.

So this is my low fat and  Eggless Lemon Tart recipe. I hope you will enjoy it as much as we do.

Koleh Koleh  Recipe @

This is a traditional kuih made of green bean flour, coconut milk and sugar. In the olden days, the flour has to be prepared from scratch but now it's easily obtainable from the supermarket or bakery outlet. Before cooking this tasty treat you have to prepare the coconut crumbs (tahi minyak), sugar syrup then only you can proceed in making this kuih.


1 cup green bean flour
2 cups coconut milk
pinch of salt
220g palm sugar (gula Melaka)
1 cup water
3 tablespoons granulated sugar
1 fragrant screwpine leaf
1 cup coconut milk for crumbs


1. Pour 1 cup coconut milk in a pot, with low heat  keep stirring until you get the oil and crumbly coconut, after it turns brown remove the crumb but keep the oil.

2. In an another pot, boil palm sugar, granulated sugar, water and screwpine leaf until sugar is dissolved.

3. Combine flour, syrup, coconut milk and salt, mix well and strain.

4. Pour the mixture onto the pot used for making the crumbs, keep stirring until it thickens.

5. Now pour onto desired tray. Sprinkle the coconut crumbs (tahi minyak) on top before serving.

6. Cool completely before cutting.
