BINGKA PISANG

Bingka Pisang Recipe @ http://treatntrick.blogspot.com

There are over riped bananas laying on my kitchen counter so I'd decided to  bake the traditional cake with them.  Banana is a versatile fruit, either eat them on their own,   add them in smoothies, cake, pudding, bread, ice cream or even cereal.

This  traditional cake was made with  mashed banana.   If possible, use fully ripe banana, it is much sweeter and you only need to add lesser amount of sugar in your cake..

Most of traditional recipe does not require any baking powder nor mixer, just simple mix and bake method but the end result  was far better and healthier.

BINGKA PISANG
Yield  :   8 in  loaf

1 cup all purpose flour
2 tablespoon cornflour
1 1/4 cup mashed banana
1/2 cup whole milk
1/2 cup sugar
1/4 tsp salt
1 tablespoon oil

Serve these colorful bites with piping hot cup of tea or a glass of milk.

These colorful cookies are also great for serving at holiday party or for sharing at a cookie exchange.

Cabbage Fritters Gluten Free

If you're looking for  simple and delicious gluten free  fritters, you should try this recipe makes with only a few ingredients. The star ingredient for this fritter is cabbage. Along with chickpeas (garbanzo)  flour, onion, green chili and other ingredients, they are well combined to form into a thick batter before dropping them into hot oil.

Cabbage Fritters is a great example of how to enjoy delicate flavor of cabbage in your favorite appetizer/snack. Cabbage also contains Vitamin K, Vitamin C, fiber, folate and magnesium.

Keeping cabbage cold will keep it fresh and help it retain its vitamin C content. Put the whole head in a plastic bag in the crisper of your refrigerator.

EGG FREE FRENCH TOAST

Egg Free French Toast Recipe @ treatntrick.blogspot.com

Made this  Egg Free French Toast  for our breakfast today using pandan (screw pine leaves) flavored bread, which was perfect.

My family was super impressed, can't really tell that it was eggless. We loved it! I served them with brown sugar and banana slices. Actually the syrup was a left over from my Monkey Bread from scratch , diluted with few spoons of milk.

For other variation, you can add besan (chickpea flour) instead of cornflour and seasoned with ground black pepper and chopped cilantro for a savory  version.

To obtain a nice golden color, use low medium heat when frying the Egg Free French Toast.  If you are allergic to dairy product,  replace it with almond or soy milk instead.

MONKEY BREAD FROM SCRATCH

Monkey Bread From Scratch Recipe @ treatntrick.blogspot.com

Nothing beats homemade bread, fresh or fluffy from your own kitchen. Get your kids involved for lots of kitchen fun especially for this Monkey Bread from scratch recipe, make them rolling and coating the dough with sugar, a great way to introduce them into baking.

I only use 2 cups of flour since I'm feeding a small family but feel free to double  or triple the recipe. Also  had rolled the dough into a  smaller ball (1/2 in) instead of 1 in. In fact it rose up to the brim of my bundt pan.

It should work with 18 cm  ring pan too. Anyway it turned great and my family devoured them in no time. I'm sure your family will love it as much as we do!.
