HOW TO MAKE FINGER ROLLS RECIPE

These  yeasted rolls are made with regular flour and whole wheat.

I have tried all sort of bread baking with variations of method. How To Make Finger Rolls use slightly different way from what I used to make.

Remarkably easy recipe but need muscle work if you're using your hand or else dump the dough in your stand mixer  or bread maker to knead it.

Another thing I notice that  How To Make Finger Rolls let you shape them immediately after kneading.  Then allow to rise until doubled for 1.5 to 2 hours.

When adding liquid to the dough, add in increments,  All flour is hot the same,  you may  need more or less water/milk as indicated.

I really enjoyed making them.  the dough is so lovely to work with. You can ice them or stuff with sweet or savory filling if desired.

LONTONG GOREMG aka FRIED RICE CAKE RECIPE

This was made with lontong (rice cake) and flavored with blended chili, onion, sauces and chicken.

A versatile dish, it can adapted to suit your preference.  For instance the add in of vegetables can be bean sprouts,  mustard green, cabbage  or bok choy.   You can opt for prawn of minced meat instead of chicken..

Lontong Goreng is suitable to serve as breakfast or for lunch as well.  Nowadays lontong was readily available from supermarket 24/7 .

Adjust the sauces and  chili paste  to season the Lontong Goreng the way you like it.  For those who can't get hold of rice cake at you place, replace it with cooked noodle or spaghetti.

DIGESTIVE BROWNIES RECIPE

Deliciously yummy treat  using Digestive biscuits,  made from scratch.

Am craving for a dessert that was quick and easy that does not involve a complicated step to make.  So I decided to whip up  this Digestive Brownies.

Since I have a sleeve of digestive biscuits so why not incorporated them in brownies. I crushed these but you can use quartered digestive over the top of brownies batter.  Actually you can use other cookies but stick to this proportion , 1 1/2 cups to be added to the batter and 1/4 cup for topping (quartered or crushed).

Always prefer not so sweet treat so use only 3/4 cup of sugar, Digestive Brownies were so good even my hubby who are not keen having sweet dessert requested for extra pieces.

TAPIOCA PANCAKE aka LEMPENG UBI RECIPE

A traditional pancake made with fresh grated tapioca and coconut.

It has been over  10 years since  I have eaten this Tapioca Pancake served by my late mum.

Those days, we have to prepare the tapioca from scratch.  Peeling and grating was the first step for making this pancake.  Today grated tapioca was readily available in the market.

Using a non stick pan eliminated  the need to use excessive oil when frying  them.

Tapioca Pancake can be eaten with sugar or dip in spicy gravy.   Sugar could be added while mixing the batter for a sweet version. So I leave it to you to decide how you want to enjoy them.

Beautiful and delicious, this Spiced Apple Bread is made with grated apple spiced with cinnamon and  nutmeg,

First of all, Eid Mubarak  to  those celebrating and kindly forgive me for my MIA due to  some important  family commitments.

This Spice Apple Bread is a perfect choice to  make if you have extra apple stock. It is remarkable easy to whip up.

Using box grater, the royal gala apple works well for this recipe.   You can use other apple varieties as well.  Although you can't see the apple but the taste is there when you take a  bite.

KEEMA PARATHA RECIPE

A flat bread stuffed with curried minced meat.

This Keema Paratha is a wonderful recipe made with paratha (flat bread).   There are tons of variations you could do with this paratha.

Am using minced lamb but other meat are equally tasty too.  If you are a vegetarian, replace the meat with tofu, paneer or garbanzo beans.

Instead of using an individual ground spice, go for ready made spice mix like meat curry powder or korma powder if it is available at your place.

Also added cooked green peas for my Keema Paratha that blends so well with minced meat.

BANANA SCONES RECIPE

An egg free  Banana Scones made with regular pantry items and really easy to make.

I have 2 bananas lying on my kitchen counter and need to do something before it turns bad.

After so long, I did not make any scone so  this Banana Scones  are the best option.

The dough was bit sticky but still  manageable.  Am able to shape it into 7 in round onto floured baking pan with my hand.  Place the dough in the middle of the pan, pat on top and run your hand along the edges to give it a nice round shape to the thickness of 3/4 in.

My Banana Scones take exactly  20 minutes to bake but it may vary depending type of oven you are using, so adjust accordingly.

FRIED TEMPEH & POTATO IN SOY SAUCE RECIPE

Mixed vegetables  dish  consisting of  fried  tempeh and  potato simmered in spicy sweet soy sauce.

One of my son's favorite vegetables, tempeh (fermented soya  bean cake), potato  with loads of bird's eye chili.

Fried Tempeh & Potato in Soy Sauce was extra spicy due to addition of bird's eye chili.  Spices are a matter of individual taste so adapt accordingly.

Adjust the soy sauce and sugar to your liking.  Cut the tempeh and potato into almost equal size for  uniform cooking.  If you choose a healthier option, do boil,  bake or microwave the potato  until done but still nice and firm.

Fried Tempeh & Potato in Soy Sauce is a versatile dish.   In case you run out of potato, easily replace it  with tofu  or sweet potato. For extra crunch and taste,  add some fried anchovies to the above and toss well..

DORAYAKI RECIPE

Dorayaki is a popular Japanese pancake sandwich with sweet red bean paste,  eaten for breakfast, as a dessert or snack.

This pancake uses least liquid but more eggs to get those super soft texture.  I rest my batter for 30 minutes  before frying.

The original dorayaki is  sandwiched with red bean paste but I don't have them at the moment so replace it with chocolate and some with  peanut butter and jelly.

Since the batter contains sugar and honey, it tends to brown faster.   so you need to watch first few  carefully  and adjust the heat accordingly.

The fluffy and fragrant  little  Dorayaki   turned out so cute and DELICIOUS.   Am going to try next with other fillings such as blueberries, coconut jam (kaya), strawberries and many more.

CHOCOLATE BISCUIT CAKE RECIPE

The easiest and most decadent no bake Chocolate Biscuit Cake made  using crumbled biscuits, cocoa powder. and eggs.

In Italy or Portugal they shaped this dessert into a log  called Chocolate Salami and  a bit of port wine was added in their recipe. For Malaysia it is known as Batik Cake made with milo,  cocoa powder, condensed milk and eggs.  Some uses dark chocolate instead of cocoa powder.

Used brewed coffee  but you can replace it with  cream or milk.

I have shaped mine into a log but you can just pour the mixture onto lined cake or loaf pan.  Cover the pan with plastic wrap before letting it set in  freezer or refrigerator.

Chocolate Biscuit Cake is a great way to use up  leftover biscuit and to transform it into a  wonderful treat for your family and friends.

MUTABBAQ (MURTABAK) RECIPE

Mutabbaq is a stuffed flat bread originating from Saudi Arabia.  It is now popular in   Malaysia, Singapore, Brunei, Thailand, Indonesia and India,  The name and ingredients may significantly vary from one country to another.

My Mutabbaq Recipe was stuffed with tuna,  It could be filled with your choice of fillings.  Be it sweet or savory.  It can be enjoyed anytime of the day,  You could use  minced meat or  turns it meatless if you are vegetarian.

When adding liquid or milk to the flour, add in little by little until you get a  soft dough.  Add more milk if needed because it depends on type of flour you use.

When rolling out the Mutabbaq on dusted surface,  make sure it is really thin to ensure  fully cooked  bread and proper balance of dough and filling.

I used my non stick pan to fry these mutabbaq and much less oil but you could use cast iron pan if you have.
