These spicy meatballs are served in a mildly hot gravy, seasoned with onion, ginger, garlic and some spices. These koftas are fried before cooking. If you're health conscious, avoid frying, you can simply drop the meatballs in the gravy and let them simmered until it was cooked through or another option was to bake them..
It can be made from ground beef, lamb or chicken. The corn flour acts as a binding agent so you will get a smooth and beautifully shaped balls.
This low fat version of kofta curry without coconut milk, yogurt or cream had just the right amount of heat and spice.
KOFTA (MEATBALL) CURRY
Yield : 4 servings
For kofta (meatball)
500 g ground beef/mutton/chicken
2 onion chopped fine
2 tsp chopped ginger
3 cloves minced garlic
3 green chili chopped fine
1 tsp chili powder
1/2 tsp turmeric powder
handful of cilantro chopped
2 tablespoon corn flour
salt to taste
oil for frying if needed
In a bowl, combine all the above ingredients except oil. Shape mixture into large balls by rolling each ball between your palms until smooth. Fry in oil or bake @ 160 C for 30 minutes. Keep refrigerated if you are not frying them.
For gravy
Grind
2 onion
2 medium tomato
4 green chili
2 cloves garlic
1 cm ginger
Add to the ground ingredients
1 tsp chili powder/paprika
1/2 tsp turmeric powder
2 tsp coriander powder
1 tsp cumin powder
1 tsp fennel powder
For frying
1 onion sliced
4 cloves
4 cardamoms
1 stick cinnamon
3 tablespoon oil
2 cups water
1-2 tablespoon lemon juice
salt to taste
handful of cilantro
METHOD
Heat the oil, add ingredients for frying, cook until onion turns soft.
Add in ground ingredients, fry for 1 minute, add 2-3 tablespoon of water if the mixture becomes too dry and continue cooking until oil separates using medium heat.
Now add 2 cups water and salt, cover and bring to boil Slide in the meatballs, turning them over gently in the gravy to coat them well. Reduce the heat and continue to simmer for 10-15 minutes stirring occasionally without breaking the kofta until it was cooked through.
Add the lemon juice and sprinkle with cilantro before removing from heat.
Serve over rice, naan or chapati.
