EGGLESS MARBLE BANANA CAKE

This is an easy recipe that makes a great looking cake. Kids just love it.   It uses the ingredients most likely you already have in your pantry, without a special trip to the shop.

I didn't even use a mixer, just stir the mixture with a wooden spoon. It was low in fat and also egg free. The classic pairing is chocolate and vanilla but there are so many more possibilities. This is my new favorite cake, it turned out wonderfully,  very moist and  tasty!

EGGLESS MARBLE BANANA BREAD
Yield     :    8 servings

1 1/4  cup  all purpose flour
1 cup  mashed banana
1/2 - 3/4 cup caster sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2  cup  canola oil/.melted butter
2  tablespoon cocoa powder
1 tsp vanilla extract
2-3 tablespoon milk if needed

METHOD

Preheat oven @ 175 C and grease 7 in cake pan.

Combine flour, salt, caster sugar, baking soda and baking powder in a mixing bowl.

Combine banana,  oil and vanilla extract in a small bowl.

Now mix in banana  mixture to the flour mixture. Stir until just moistened. If the batter is too thick, add milk a tablespoon at a time until you get a right consistency, it should be easy to spread.

Divide batter into 2. Add cocoa powder to one portion, sir well. Leave the other half plain.

Place the cake mixture into prepared pan by alternating spoonfuls of plain batter with chocolate batter. Using a skewer, swirl the batter to get marbled effect.

Bake for 25-30 minutes or until a skewer inserted comes out clean.

Cool the cake in the pan for 15 minutes, transfer onto wire rack and allow  to cool completely.

    You can use 1/4 cup melted butter instead of oil also sift 1/2 tsp baking soda with flour and baking powder for better result. If you use self raising flour, do omit soda and baking powder. Let me know how this turns out!

  38. Well i made this today. It did rise very nicely and was very yummy. I added a bit of milk cause my mixture was very stiff though. A nice cake though and impressive looking.

  39. I made this in a pound cake pan since my cake pan is too big and it turned out great. I added about half a cup of greek yogurt and subbed light olive oil for canola (I live in Spain--we use it in everything). My egg allergic son said it was the best cake I've ever made! I was thinking of doing an alternate version with half of the batter mixed with spices and the other half persimmonized. Thanks so much. I can't wait to try your other recipes.

  45. Thanks a lot for the recipe. I made it and it did turn out to be yummy.. Though I made a few alterations according to my ingredient availability. One problem I faced is, the mashed banana started turning brownish and hence my end product was light brown and dark brown in colour. Any way to have the colour unchanged?
