If you're looking for simple and delicious gluten free fritters, you should try this recipe makes with only a few ingredients. The star ingredient for this fritter is cabbage. Along with chickpeas (garbanzo) flour, onion, green chili and other ingredients, they are well combined to form into a thick batter before dropping them into hot oil.
Cabbage Fritters is a great example of how to enjoy delicate flavor of cabbage in your favorite appetizer/snack. Cabbage also contains Vitamin K, Vitamin C, fiber, folate and magnesium.
Keeping cabbage cold will keep it fresh and help it retain its vitamin C content. Put the whole head in a plastic bag in the crisper of your refrigerator.
CABBAGE FRITTERS GLUTEN FREE
2 cup white cabbage chopped fine
1 cup chickpeas flour (besan)
1 big onion chopped
1 tsp chili powder
3 green chili chopped
1 sprig curry leaf torn
2 tablespoon chopped cilantro
1 tablespoon rice flour
water to form into thick batter
oil for shallow frying
salt to taste
DIRECTION
Wash the cabbage after cutting, drain well.
Combine cabbage, onion and salt in a mixing bowl, let sit for 10 minutes.
Add besan, chili powder, green chili, rice flour, cilantro and torn curry leaves to cabbage mixture.
Sprinkle few tablespoons of water to obtain a fairly thick batter, stir until well mixed.
Heat 6 tablespoons of oil in a non stick frying pan, scoop a teaspoon of batter to form one fritter onto hot oil.
Fry until it turns golden brown, flip and cook the other side.
Remove and drain on absorbent paper. Complete the rest of the batter.
