Once a while we love to eat pasta especially a stir fried ones. We will devour any kind of pasta that is long and spicy. While we do have a typical pasta sometimes I mix things up with pasta from different countries. I make sure they have more fiber and other nutrients.
You can always use less chili paste for a milder version. Anyway, we like ours to be super spicy, in fact I had used bird's eye chili for this recipe.
This meal is delicious and ready in minutes. Feel free to substitute any type of meat or vegetables to this dish or skip the meat altogether.
STIR FRIED PASTA
Serves : 6-8
500 g cooked pasta
2 cups mustard greens
250 g chicken fillet sliced
2 pieces fish cake sliced
8 shallots chopped
3 cloves garlic chopped
2-3 tablespoon chili paste
150 g bean sprout/carrot/peas
1 1/2 tablespoon sweet soy sauce
3 tablespoon oil
salt to taste
DIRECTIONS
Heat the oil in a wok, when heated add in shallots, garlic and salt. Stir fry until onion turns soft.
Add in chili paste, fry until fragrant.
Now add the chicken, fish cake, carrot (if using), soy sauce and saute for a few minutes. Sprinkle some water, stir until chicken is fully cooked.
Pour in cooked pasta. mustard greens.bean sprout, cook until it heated through and mix well.
Add more salt if needed and serve hot.

I love a simple pasta stir fry- it's what I make when I don't have any lunch ideas since we always have pasta in the house, and its pretty simple and quick to make! :) Your version looks great! (Although it would be much too spicy for me haha)
