Another brownies for you all. I just can't get enough of them at the moment. Not only because I happen to have a pantry full of their ingredients but also they are so easy to make and taste so delicious. This Eggless Coffee Brownies certainly take the cake.
There are so many brownies recipes out there and everyone has a favorite. I'm sure you have one that suits your taste. All these brownies have enough chocolate flavor but varying the amount of chocolate, butter, sugar and flour, the texture of each brownies is quite different.
I did minor changes to regular brownies recipe by adding strong coffee. The contrast of flavor of this Eggless Coffee Brownies is extremely good.
EGGLESS COFFEE BROWNIES
Yield : 2 dozen
1 cup all purpose flour
1/4 cup corn flour
1/4 cup cocoa powder
3/4 cup sugar
100 g melted butter
1/2 cup strong coffee
1/4 cup milk
1 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp baking soda
DIRECTIONS
Lightly grease 8 in pan and preheat oven @ 180 C.
Sift together both flour, cocoa, baking powder and baking soda into a mixing bowl.
In another bowl, whisk together butter, milk, strong coffee and vanilla extract.
Now combine wet ingredients with flour mixture. Stir until well blended.
Stir mixture into prepared pan and bake for 25-35 minutes or until a skewer inserted comes out clean.
Leave in pan for 10 minutes, transfer onto rack to cool completely.
