There are many variations of fruit cake, including a version that require soaking of the fruit for days while another one need you to boil the dry fruits and butter.
Am sharing with you a really quick and easy Dry Fruit Bundt Cake and one of the ingredients was condensed milk. Using condensed milk in a fruit cake is a new one for me but it always fun to try. Dry Fruit Bundt Cake is also made without sugar.
If you need to avoid egg, you can substitute with plain yogurt or pureed fruit.
I find it easier to slice without it breaking so easily because the fruits remain soft and stick together. You can easily increase the mixed fruit up to 1 cup if desired.
DRY FRUIT BUNDT CAKE
Yield : 10 slices
1 1/4 cup plain flour
1/2 cup condensed milk
1/4 cup orange juice
1 egg or 1/4 cup plain yogurt
1 1/2 tsp baking powder
1/4 tsp baking soda
70 g melted butter
1 tsp vanilla essence
2/3 cup dry mixed fruit
1/2 tablespoon flour
METHOD
Preheat oven @ 180 C and grease your bundt pan.
Combine mixed fruit with half tablespoon of flour, this prevents the fruits from sinking in the cake as it cooks.
Sift together flour, baking powder and baking soda in a mixing bowl.
In another bowl whisk together butter, condensed milk, vanilla and yogurt or egg.
Combine dry ingredients with butter mixture, stir until well mixed.
Stir in mixed fruit, stir to combine.
Pour mixture into prepared pan, tap gently and bake for 20 minutes @ 180 C, reduce temperature to 170 C and continue baking for another 20 minutes or until a skewer inserted comes out clean.
Cool in pan 15 minutes,. loosen the edges with plastic spatula, invert onto rack to cool.
