These Pizza Dough Apple Hand Pies are made from yeast free pizza dough. I follow this recipe with slight changes. Omitted dry milk and use evaporated milk instead.
The crust is less buttery since we are using 5 tablespoon of melted butter/oil when compared with regular pie crust. This suits for those looking for lightened up pie crust that was flavorful, easy to handle and bake beautifully.
Cut the apple into a half inch cubes then coat with the rest of the ingredients for the filling. You will get some liquid after some time, only scoop the apple but leave behind the liquid when stuffing the hand pies.
Any variety of apple such as red delicious, gala or macintosh can be used instead of granny smith. Another tip is to bake these Pizza Dough Apple Hand Pies on the lowest rack of the oven for 10 minutes, This trick ensures a nicely cooked, never soggy bottom.
PIZZA DOUGH APPLE HAND PIES
Yield : 10
2 1/4 cup plain flour
1 tsp baking powder
5 tablespoon oil/melted butter
3/4 cup evaporated milk
1/2 tsp salt
FILLING
3 granny smith apple cored and cubed
3 tablespoon sugar
2 tablespoon lemon juice
1 tablespoon flour
1/4 tsp salt
1/4 tsp ground cinnamon
METHOD FOR FILLING
Combine all the above ingredients, keep refrigerated until ready to use
DIRECTIONS FOR DOUGH
Whisk together flour, baking powder and salt in a mixing bowl.
Add in oil/butter and milk until it forms into soft dough.
Cover and let the dough rest for at least 30 minutes.
ASSEMBLING THE HAND PIES
Divide the dough into half, keep the other half covered. Roll out dough into 1/8 in thick.
Using a cookie cutter or a glass, cut out into 3 in circles.
Spoon a heaping tablespoon of filling, place another circle atop of filled dough, press the edges together, crimp them with a fork
Make a slit with a knife on top of the crust and place into baking sheet. Repeat with the rest of the dough. Preheat oven @ 185 C.
Brush with butter and bake for 10 minutes on the lowest rack then transfer to middle rack for another 29-25 minutes or until golden brown.
Let stand to cool slightly before serving.
