Bingka Roti - A baked dessert using bread slices, eggs, milk and plain flour that was firmer and easy to slice.
I have a few slices of stale bread lying on the counter. To rescue those bread am making a bread pudding or Bingka Roti.
This Bingka Roti was slightly different from my earlier bread pudding recipe. as it was firmer and easy to slice due to addition of plain flour.
You can choose other add ins such as sweet corn, jack fruit or banana. Also instead of milk, opt for coconut milk instead.
Other recipes using bread:
Microwave Bread Pudding
Egg Free French Toast
Roti John (Asian French Toast)
Bread Paratha
BINGKA ROTI (HOMEMADE BREAD PUDDING)
Yield : 8 servings
6 bread slices
2 3/4 cups evaporated milk
3/4 cup sugar
1 tsp vanilla essence
3/4 cup plain flour
1/3 cup raisin
3 eggs
METHOD
Cut bread slices into bite sized cubes or tear into pieces with your hand.
Beat sugar, eggs and vanilla essence with a whisk.
Mix in flour and milk, whisk until no lumps.
Add in bread and let soak for 20 minutes.
After 20 minutes preheat oven @ 180 C and grease 9 in cake pan.
Pour bread mixture into prepared pan, scatter raisin on top and bake for 40-50 minutes or until a skewer inserted comes out clean.
Transfer the pudding to wire rack to cool completely. Slice to serve.

ReplyDeleteThis looks soooo yummy! I love the suggestion of making it with coconut milk instead - that's the way I would do it I think. (I just love coconut milk.) Thanks for linking up at Share the Wealth Sunday - looking forward to see what you're cooking up next week!

ReplyDeleteWow, that looks wonderful. I can picture a hot cup of coffee in one hand and that delish dessert in the other! Thanks so much for joining the DI & DI link Party.
ReplyDeleteInteresting. Does the recipe work if you use mostly bread crusts? My kids tend to eat just the inside of the bread and leave the crusts, so I always end up with lots of crusts around. This would be a wonderful way to use them...
