Enjoy this yummy quick bread made with mashed potato, perfect for breakfast or in between snack.
My Potato Bread is made free of yeast so no waiting and kneading required.
I used 3 medium potato, peeled and boil until tender. Water level should be above potato. Once cooked, mash it while still hot.
This Potato Bread was mildly sweetened but you may add more if you prefer a sweeter bread.
Baked this for exactly 50 minutes so adjust according to your oven setting. .

Potato Bread Recipe
Yield : One loaf
1.75 cups plain flour
3/4 cup sugar
1 cup potato mashed
2 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground ginger
6 tablespoon oil / melted butter
6 tablespoon water
2 large eggs
1/2 tsp salt
METHOD
Preheat oven @ 175 C and grease 8 in cake pan or loaf pan.
Sift flour and baking soda and baking powder , mix in salt.
In another bowl, whisk together sugar eggs, cinnamon and dry ginger. Add in mashed potato , water, oil/ melted butter.
Add in potato mixture to the dry ingredients, stir until well incorporated.
Spread evenly into prepared pan, bake for 50-60 minutes or until a skewer inserted comes out clean.
Cool in the pan 15 minutes, transfer onto rack to cool.
