KITCHREE (SPICED YELLOW DAL WITH RICE) RECIPE

A combination of rice and yellow lentils  make this a nutritious meal. I serve  my  Kitchree or Kitchari  with Ayam Masak Merah (Chicken in Spicy Red Sauce),

You can  make this rice on stove top  following my  recipe below or use rice cooker.

For rice cooker, fill your cooker with water, milk, yogurt, salt and turmeric and bring to boil by pressing the 'cook' button.  In a separate pan, heat the ghee, fry onion,  cinnamon, cardamom,, cloves, ginger and garlic till fragrant.

Once the water is boiling, add in rice, lentils and the fried  spices.  close lid.  You need not worry about burnt rice, the rice cooker would take care  for you.

KITCHREE  (SPICED YELLOW DAL WITH RICE) RECIPE
Serves   6-8

2 cups basmati rice, wash and drain
1 cup yellow lentils, soak 2 hours wash and drain
1 medium onion sliced
1 tsp turmeric powder
3 tablespoon ghee
1/2 in ginger grated
5 small cloves garlic chopped fine
1 tablespoon plain yogurt
1  cup evaporated milk
3  cups water
salt to taste
 i stick cinnamon
2 cardamoms
4 cloves

DIRECTIONS

Combine rice and lentils together in a  bowl,

Heat ghee, fry onion,  cinnamon, cardamom,, cloves, ginger and garlic till fragrant.

Add water, salt,  yogurt, milk and turmeric and bring to the boil.

Add in rice and lentils.  Once the water is absorbed, lower heat, cover the pot and continue cooking for 15 minutes.  You can place a flat pan below the rice pot to avoid rice getting burnt.

Remove cover and fluff the rice. Ready to serve.

  3. Ooooo yum. I could have this as as for a meal and feel completely satisfied. Love the fact that the rice and lentils are cooked in a milky, yogurt water. Can't wait to give it a try
