This Mocha Oatmeal Cake is a perfect dessert to enjoy with family and friends. Addition of oatmeal is a great way to include fiber in your diet too.

The rolled oat is soaked in coffee for 20 minutes before adding to the batter.
I have used a wire whisk to beat the butter and sugar but you could use a mixer to do the job.
Mocha Oatmeal Cake turns out gorgeous with no cracks and utterly moist. I think the sweetness is on a lighter side , you may add extra sugar for a sweeter version.

MOCHA OATMEAL CAKE RECIPE
Makes One 8 in cake
1 tablespoon instant coffee
3/4 cup rolled oat
1/2 cup plus 3 tablespoon boiling water
1/4 cup softened butter
1 cup white sugar
1 tsp vanilla essence
2 eggs
3/4 cup plain flour
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1 tablespoon cocoa powder
DIRECTIONS
Combine coffee with boiling water, stir well. Add in rolled oat, mix and let stand for 20 minutes.
Grease 8 in cake pan or 8 x 8 in pan.
Whisk together item 8-12, keep aside. Preheat oven at 180 C.
Beat sugar and butter until fluffy, add in egg one at a time.
Mix in oat mixture, vanilla and remaining ingredients. Stir until well blended.
Spread batter evenly in pan. Tap pan 2 times,
Bake in a preheated oven for 35-45 minutes or until a skewer inserted comes out clean.
Cool in pan for 15 minutes before transferring onto rack to cool.
