This make ahead recipe is full of crunchy colorful veggies and spicy yummy filling all rolled up into easy to eat finger food. So let's have our all time favorite snack called Veggie Pinwheel Tikki / Vegan Veggie Pinwheels.
This spiced mixed veggies is wrapped in whole wheat pastry, roll into tight log and cut into 1 in thick. Veggie Pinwheel Tikki / Vegan Veggie Pinwheels were shallow fried until golden and serve with ketchup.
Chopped cabbage, grated carrot and mashed potato are combined and seasoned with chili powder, chaat masala, ground cumin and onion as the filling. You could also use tortillas for the wrapper. These were incredibly tasty and disappear in no time.
If you are not keen for spiced pinwheel, this Pizza Rolls is for you. It tastes exactly like regular pizza but in rolls form.
VEGGIE PINWHEEL TIKKI / VEGAN VEGGIE PINWHEELS
Yield : 18 depending on size
2 cups whole wheat flour
2 tablespoon oil
1 tsp chili flakes
3/4 tsp salt
water
FILLING
5 tablespoon cabbage finely sliced
1 carrot grated
1/2 onion chopped
1/2 tsp cumin powder
1/2 tsp chaat masala
1/2 tsp chili powder
2 potato boiled and mashed
2 tablespoon chopped cilantro
salt to taste
oil for frying the pinwheels
DIRECTIONS
Pastry : Combine all ingredients and form into soft dough. Keep for 20 minutes.
Filling : Place all ingredients in a bowl. stir to combine.
Roll out the dough into 1/4 in thick circle, spread the filling evenly leaving 1 in allowance along the corner. Roll tightly into a cylinder, pinch seams to seal and cut into 1 in thick, flatten slightly and shallow fry until brown. Serve with ketchup or chutney.
