It is loaded with carrot and warm spices of ground cinnamon and ginger. Using only 3/4 cup of sugar but you can increase up to 1 cup if you want it sweeter. By adding mashed bananas it cuts down the use of butter or oil in the recipe thus makes it healthier.
This bread is delicious on its own as for festive touch, a drizzle of cream cheese or lemon glaze on this Perfect Carrot Bread is what you need. It takes exactly 50 minutes to bake this loaf, turned out tender, just sweet enough and beautifully sliced.

PERFECT CARROT BREAD
Yield : 14 slices
2 cups plain flour
3/4 cup sugar
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1.5 cups shredded carrot
1 cup mashed banana
1/3 cup canola oil
2 large eggs
1/2 cup chopped nuts (optional)
DIRECTIONS
Preheat oven at 180 C and grease your loaf pan.
Whisk together eggs, banana and oil in a small bowl.
Combine flour, salt, cinnamon, ginger and sugar in a mixing bowl. Add banana mixture to dry ingredients, stir until just moistened.
Fold in carrot and nuts if using, stir well.
Transfer batter into greased pan and bake for 50-60 minutes or until a tester inserted comes out clean.
Cool in pan for 10 minutes before transferring to rack to cool.
