Do you feel bored having the same chicken dish? Look no further, am sharing this fantastic Ayam Sambal Pecah2/ Chopped Sambal Chicken that makes you go for second helpings.
Made with fresh red/green chili and bird's eye chili, onion, tomato and garlic. The sambal paste is made by frying items 5 - 10 then drain. Coarsely blend them in a food processor with little oil. For lesser spicy, reduce the chili according to your taste.
The cleaned chicken is cut into 14 - 16 pieces, coated with salt and turmeric before deep frying. Make sure not to make them crispy but soft and juicy. The blended sambal paste is fried in oil for 5 minutes before added water, shrimp paste, tomato and lime juice. Lastly add the fried chicken, salt and sugar and let simmer for 3 minutes.
Ayam Sambal Pecah2 / Chopped Sambal Chicken is now my family's favorite and my son already request to cook again next week.

1 whole chicken cut into bite size
1 tablespoon salt
1 tablespoon ground turmeric
cooking oil for frying
5 red chili sliced
5 green chili sliced
5 red bird's eye chili
5 green bird's eye chili
5 cloves garlic
5 big onion sliced
2 tomato sliced
Juice from 2 limes
1 cup water
1 in shrimp paste crumbled (optional)
salt and sugar to taste
DIRECTIONS
Clean and remove fat from the chicken, cut into 14 - 16 pieces. Coat the chicken with turmeric and salt. Deep fried then drained. Heat 3 small ladelful of oil from frying chicken in a pan, fry item 5 - 10 for 5 minutes. Drain then coarsely blend with little oil. Put back the blended items in the same pan, saute for 5 minutes. Add in tomato, lime juice, water and shrimp paste if using. Add in fried chicken together with salt and sugar, simmer for 3 minutes. Remove from heat.
