POTATO CUPS

Potato Cups Recipe @ treatntrick.blogspot.com

Potato Cups make a tasty appetizer.  Prepare them ahead and reheat them  just before serving. You can also freeze them. Run a sharp knife around the edges to loosen them from the cups.

These are made of grated potato, onion, garlic, cilantro and cornflour. It is ready in no time since I have cooked them using microwave. For crusty cups you can bake Potato Cups in muffin pan.

POTATO CUPS
Serves   2-3

3 larges potato grated
3/4 C water
3 garlic chopped
1 onion chopped
3 green chili chopped
1 tsp black pepper
salt to taste
3 TB corn flour
1/4 C chopped cilantro
oil to grease

METHOD

Place potato, salt, black pepper, garlic, onion and cilantro in a mixing bowl.

Add in corn flour, gradually add water to form into thick batter.

Grease small microwavable plastic cups, pour the batter 3/4 cup full.

Microwave on high for 4 minutes. Let sit in the cup for 10 minutes, remove and serve.

You can also cook bake them in a preheated oven in muffin cups.

  15. I love potatoes may it be mashed, chips, jacket, in soups, curries or plain boiled. (When I was a student suffered gastric attacks - almost missed my final exams, when I found out potatoes worked best on gastrics, a must have for me).

This is a nice change from the usual, have not tried before.. TQ for sharing!

    Cheers
