Date Oatmeal Bars are a wonderful treat anytime of the day. Sweet and soft dates are sandwiched between not so buttery oat and flour mixture. They are easy to make, everyone will love them.
Since most of us eat way too much sugar in our diet, I try to use less sugar and more nutritious ingredients such as fruits, nuts and oat. My date bar recipe has these characteristics. It is a very nice alternative to have an easy breakfast or snack instead of going into a fast food restaurant.
This dessert encourages us to prepare a simple meals from basic ingredients instead of expensive and less nutritious processed foods .I have tweaked the recipe as per my preference by omitting sugar in the filling and reduced the amount of butter used. Really surprised to see that these bars were a great hit with my family.

*DATE OATMEAL BARS*
Yield : 16 bars
FILLING
1 cup chopped pitted dates
1/2 cup water
BAR
1.5 cups rolled oat
1 cup all purpose flour
1/2 cup sugar
1/2 tsp baking soda
1/2 tsp salt
5 tablespoon melted butter
5 tablespoon milk
1 medium banana mashed
METHOD
Place dates and water in a small saucepan, cook over low heat about 10 minutes, stirring constantly until thickened. Remove and cool.
Combine oat, flour, salt and baking soda in a mixing bowl.
In a small bowl whisk together butter, milk, banana and sugar.
Add in wet ingredients to the flour mixture, stir until well combined.
Lightly grease 8 in pan and preheat oven @ 180 C.
Press half of the mixture evenly in bottom of the pan.
Using clear plastic, spread with filling.
Top with remaining dough over date mixture, press lightly.
Bake for 25-30 minutes or until a skewer inserted comes out clean.
Cool in pan 10 minutes. Cut into bar while still warm.

You're right - we do eat too much sugar! However, dates do help us cut back on that. Love what you have done here with these bars! A great filling and the cookie top and bottom sounds delicious. Great bars!
