This Fresh Strawberry Crostata is a free form tart recipe featuring fresh strawberries wrapped in buttery pie crust.
It has been 2 years since I baked Pumpkin Galette. I have recently managed to purchase fresh strawberries and now it is a time to bake a crostata again. These strawberries are vibrant and absolutely gorgeous, they stay firm when ripe. If you need tips of making a perfect crust, kindly check my Apple Crostata post.
This Fresh Strawberry Crostata requires a buttery crust and a filling. Prepare the crust first before proceeding to make the filling.
Wash the strawberries and drain well. the strawberry is like a sponge that absorbs water so do not let it soak in water. If the strawberries are big, slice into 3 or 4 lengthwise.
Made mine into 2 x 6.5 in circles instead of one big one, The size and shape are entirely up to you, whether you choose a square, round or rectangle.
FRESH STRAWBERRY CROSTATA
Yield : 2 x 6.5 in crostata
CRUST
1.5 cup all purpose flour
2 tablespoons sugar
1/2 cup butter cut into cubes
1/4 tsp salt
4-5 tablespoons ice water
FILLING
250 g strawberry hulled and halved
1/4 cup sugar
2 tablespoon all purpose flour
METHOD
Place flour, sugar and salt in a mixing bowl.
Using your fingertips, quickly rub in the butter until the mixture resembles bread crumbs.
Gradually add a tablespoon of ice water at a time, use your fingers to press the crumbs firmly together to form a ball of dough.
Wrap the dough in plastic, chill for 30 minutes-1 hour.
For filling, combine sliced strawberries, flour and sugar.
Roll out the pastry on floured board into 12 in circle or divide into half to make 2 x 6.5 in circle. Set them on baking sheet. Heat the oven @ 190 C.
Mound the filling in center of the dough leaving 2 in border around the edges.
Fold edges of dough over apple filling, crimp edge slightly. .
Bake until crust turns golden brown for 30-35 minutes. Cut into wedges and serve warm.
