CRANBERRY BREAD RECIPE

Enjoy freshly baked Cranberry Bread  in this tender quick bread.

This delicious bread is made with plenty of dried cranberries and nut free.  Like most of quick bread recipe,  no mixer is needed, it is simply mix and stir all the ingredients.

For successful  quick breads. DO NOT OVER MIX.  Once they are combined,  mix as little as possible.  The mixture will contain some lumps.  The result is a soft, tender, cake-like texture.

Added half a cup of sugar and that was sufficient to sweeten this bread.  You  may add more if you like.  Just add one large egg instead of 2 small one.

Cranberry Bread turns out  wonderfully soft with right amount of sweetness.  It was a cross between cake and bread.  It does not need any frosting, we love to eat them just it is with  a cuppa.

CRANBERRY BREAD RECIPE
Yield  :   14 slices

2  cups (250 g) plain flour
1 tsp baking powder
1/4 tsp baking soda
1 tsp salt
1/2  (100 g)  cup sugar
1 cup dried  cranberry  chopped   
5 tablespoon softened butter
1  cup (250 ml) buttermilk 
2 small egg

DIRECTIONS

Grease lightly a loaf pan.  Preheat oven @ 170 C.

Whisk together 1st  5 ingredients in a mixing bowl.

In another bowl, whisk together butter,  buttermilk  and egg.  

Now combine dry ingredients and  wet  mixture, stir to combine.

Mix in  cranberries , stir until well incorporated.

Spoon into prepared pan, bake for  40-50 minutes or until a skewer inserted comes out clean.

Cool in pan for 20 minutes before transferring onto rack to cool.
