A tasty snack made with sandwich bread, stuffed with vegetables. These Vegetable Bread Pockets can be customized to your liking.

Other vegetables like capsicum. beans, peas could replace cabbage.  I happen to have cabbage so use that for my filling.

Feel free to add meat  such as a cup of shredded cooked chicken or cooked mince meat if you like,  Don't forget to add extra spices if you use  meat.

I shallow fried my Vegetable Bread Pockets instead of deep frying.  These turned out crispy but soft inside.

Proper sealing is essential to avoid filling leakage,   Make a thick paste of water and plain flour as a sealant.

These yummy pockets go well with tomato ketchup or chutney but we love to eat them as it is, full of beautiful flavors!

VEGETABLE BREAD POCKETS RECIPE
Serves  :  4

8 bread slices
1.5 cup chopped cabbage
1 med carrot sliced
1 tomato chopped
1 big onion chopped
2 garlic chopped
2 tablespoon tomato sauce
1 tsp chili powder or to taste
salt to taste
enough oil for frying
flour + water for sealing

METHOD

Trim bread edges and flatten each slice with rolling pin.  Keep aside.

Heat oil, saute onion and garlic until translucent. .

Add in tomato and salt.  Once it turns soft. mix in chili powder and tomato sauce.

Add in carrot and cabbage, stir and let the veggies turns  tender.

Check for salt, remove and cool.

Place filing on the edge of bread.  Fold into half, seal the edges with a thick paste properly.  Complete the rest of the bread.

Heat enough oil on a frying pan.  Slide in the pockets.  Once it turns golden, flip and fry the other side,

Remove and place on a plate lined with kitchen towel.

  6. Oh my, that's sounds so delicious. My hubby is a big bread eater and we've never tried doing something like this. I'd be keen to experiment with different fillings too. Really yummy idea
