This Perfect Oatmeal Quick Bread  is a  super easy, slightly sweet bread loaded with  nutritious rolled oat.

Added just a  quarter cup of sugar since I intend to add dried cranberries.  You may add more if you are not adding any  dried fruit.

Firstly,  I intend to make just a plain oatmeal bread but my hubby requested to add dried cranberries in the dough.

Am so glad this Perfect Oatmeal Quick Bread turned out perfect in texture and sweetness.

In fact the addition of cranberries  eliminate the use of extra butter and jam since this is great to eat on its own.  It is actually a lot easier then what  you think to make your own.   And the results are delicious.

PERFECT  OATMEAL QUICK BREAD RECIPE
Yield  :  14 slices

1.5 cup  plain flour
1 cup rolled oat 
1 tsp baking powder
1/4 tsp baking soda
1 tsp salt
1/4   (50 g)  cup sugar
1 cup dried  cranberry  chopped   
5 tablespoon softened butter
1 tsp vanilla essence
1  cup (250 ml)  plain yogurt/buttermilk 
2 small egg

DIRECTIONS

Grease lightly a loaf pan.  Preheat oven @ 175 C.

Whisk together 1st  6 ingredients in a mixing bowl.

In another bowl, whisk together butter,  yogurt/buttermilk  and egg.  

Now combine dry ingredients and  wet  mixture, stir to combine.

Mix in  cranberries , stir until well incorporated.

Spoon into prepared pan, bake for   30-40  minutes or until a skewer inserted comes out clean.

Cool in pan for 20 minutes before transferring onto rack to cool.
