Quick and easy Chocolate Chip Banana Cake - thick, moist and loaded with chocolate chip. I used oil in this recipe to make it lighter.
It uses self rising flour, ripened banana and oil. In absence of self rising flour, add a teaspoon of baking powder and half teaspoon of baking soda to plain flour.
Beat the eggs, oil with sugar using a whisk, no mixer needed. Add in banana and vanilla, beat until well incorporated. Gently fold in flour and chocolate chips.
Used 11 x 7 in pan instead of 8 in cake pan. Chocolate Chip Banana Cake turns out perfect with well distributed chocolate chips throughout.

CHOCOLATE CHIP BANANA CAKE RECIPE
Yield : 18 slices
1 1/2 cups self rising flour
1 cup mashed banana
1/2 - 3/4 cup sugar
3/4 cup oil
1 egg
1 tsp vanilla extract
3/4 cup semisweet chocolate chips
DIRECTIONS
Grease and flour 8 in cake pan and preheat oven at 170 C.
Beat eggs, oil and sugar until sugar dissolved. Add in vanilla extract.
Mix in banana and beat until well incorporated.
Add in flour and chocolate chips. Using a spoon, stir well.
Pour mixture into prepared pan, level top, bake for 40-50 minutes or until a skewer inserted comes out clean.
Cool in pan for 15 minutes before transferring onto rack to cool completely.
