PERFECT BLUEBERRY PANCAKE RECIPE

This  Perfect Blueberry Pancake was super easy and  fail proof.  You can also make it ahead,  store in a fridge and make them fresh at the time of serving.

You can also check my Banana Pancake w/Brown Sugar Syrup. or savory Semolina and Oatmeal Pancake or Onion Pancake for a change.

This  versatile pancake  can be made with other flours too, adding  fruits like apple, strawberry, pear or pineapple.

For best result, allow the batter to rest for 15 minutes  before frying them.

I used 1/4 cup measure to make this Perfect Blueberry Pancake,  so get about 9 pancakes.

PERFECT BLUEBERRY PANCAKE RECIPE
Yield  6 servings

1,5 cup plain flour
2 tsp  baking powder
1 1/4 cup milk
1 tsp vanilla essence
2 tablespoon sugar
3 tablespoon melted butter/oil
1/2 tsp salt
3/4 cup blueberries fresh/frozen
2 eggs

DIRECTIONS

Whisk together flour, baking powder and salt in a mixing bowl.

Beat eggs, vanilla  and sugar until light,  add in milk and melted butter.

Now combine dry ingredients with milk mixture, stir until well combined.

Heat a flat pan, rub with oil.  Pour 1/4 cup of batter onto the pan.  Once tiny bubbles appear, scatter blueberries atop each  pancake..

Flip over and cook the other side until golden brown.

Remove from heat.  Serve immediately.

They sound wonderful. Everyone loves pancakes at our house, but I've never had much success storing them in the fridge. How do you heat them afterwards?
