BRAIDED MASALA BREAD

Most of the time, I baked sweet bread with filling but this week trying a savory ones  made with  my trusted bread recipe. .  .

This Braided Masala Bread is a small buttery bread, braided and stuffed with onion, green chili  and cilantro.   The filling compliments this lovely loaf perfectly. It is braided from three strand of dough, a similar fashion how you braid your hair.

If you have a mixer or bread machine, the process is even easier because these gadget knead the bread for you.  But if you don't have them, no worries, kneading with your hands is perfect and a good workout too.

Since I opt for buttery dough and stuffing  it  with onion, it becomes more sticky and hard to handle, Adding more flour is required  in order to make it easier to shape.   Actually you can shape into any shape you like but I want my bread in different shape.  Despite it turns out not so pretty ( poor braiding)   but  the taste was *so* good.  .

Braided Masala Bread  is an awesome bread!  It takes a bit of extra time to assemble but the  bread itself is very soft and baked beautifully. .

BRAIDED MASALA BREAD
Yield  :  One loaf

220 g  bread flour
50 g  butter
1.5 tsp instant yeast
1/4 tsp salt
1/2 cup milk
1  tablespoon sugar
1 egg (reserve 2 tablespoon for topping)

FILLING
1 big onion sliced
3 green chilies chopped
1/2 cup cilantro chopped
1 tsp whole cumin
1 tsp oil

METHOD

Heat oil  in a pan,  add in whole cumin, fry until fragrant.  Add in  onion, green chili, salt  and fry until onion turns soft.  Remove from heat, mix in cilantro and  allow to cool. 

DIRECTIONS FOR DOUGH

In a small saucepan, melt the butter, add in milk and remove from heat.

When the milk is warm to touch add in yeast, sugar, salt and an egg. Stir well.

Pour milk mixture onto flour, stir with wooden spoon.  Cover and let it rise for one hour.

Punch the dough down,  knead for 1 minute until smooth.  Cover and let sit for another 30 minutes.

Knead again,  mix in the filling, divide into 3 equal portions, add more flour if needed.  Roll each into a  long thick  rope about 11 in long.   Join the 3 ropes together at one end and start braiding.  Tuck in the ends. 

Place dough  onto baking pan, let it rest for 1 hour.

Brush  with egg wash,  bake for 20 minutes @ 190 C until golden.
