MOIST MARBLE BANANA CAKE

Am obsessed with marble cake  or bread.  So far I have baked  Eggless Marble Banana CakeBanana Chocolate Bread Marbled and   Marble Cake  but that does't stop me from trying another recipe.

Most  of the recipes  call for melted butter but this  Moist Marble Banana Cake uses  vegetable oil.  It has a right amount of sweetness and stay moist even after the next day.

After experiencing and baking with banana.  I must admit that using a right banana is the key to perfect cake.  The banana should be ripe but  firm and not too soft because soft banana contains more water, it tends to make your cake slightly wet.

Another point was about cocoa powder.   Adding more cocoa means you have to add more sugar to sweeten the cake.   Just add a tablespoon or two  of cocoa in the batter is more than sufficient, you still get beautiful marble effect.  So glad Moist Marble Banana Cake turned out incredible!

MOIST MARBLE BANANA CAKE
Servings  :   16

1.5  cup plain flour
2 tsp  tsp baking powder
3/4  cup sugar
1  tablespoon cocoa powder
3/4 cup oil
1  cup mashed banana
1/4  cup milk
1 tsp vanilla essence
3  eggs

1 cup =  250 ml (for liquid) or 125 g (flour)

DIRECTIONS

Preheat  oven @ 170  C and grease  7 in cake pan. .

Whisk together flour and baking powder in a mixing bowl.

In a separate bowl, beat  eggs and sugar until fluffy.  mix in, oil milk, banana and vanilla essence. Beat until well blended.

Add banana mixture to dry ingredients, stir until well mixed.

Remove 1 cup of batter,  mix in  cocoa powder, stir well.

Spoon chocolate batter alternately with plain batter into prepared  cake pan

Swirl batters using a knife.

Bake for 50-60 minutes or until a skewer inserted comes out clean.

Cool in pan 10 minutes, invert onto rack to cool.

Thanks for the recipe just finished baking it. I followed exactly the recipe but I added 1/8 cup more mashed bananas,2 tablespoons of cocoa powder and 2 tablespoons more plain flour.It turned out beautifully and moist. Great receipe.
