A deliciously spiced and moist pumpkin bread recipe, no mixer required.

Moist Pumpkin Bread Recipe  has to be one of  my favorite quick breads.  I made it with fresh pumpkin from scratch.

This is the easiest to make by combining a dry and wet ingredients in one bowl with just a whisk.

This Moist Pumpkin Bread Recipe  is a pretty basic recipe, but fell free to add semi sweet chocolate chip, raisin, seeds or nuts to make it even full of good stuff.

MOIST PUMPKIN BREAD RECIPE
Yield  :   One loaf

1 3/4 cups plain flour
3/4 -1 cup sugar
1.5 cup pumpkin puree
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 cup oil / melted butter
1/4 cup water
2  large eggs
1/2 tsp salt


METHOD

Preheat oven @ 175 C and grease 8 in cake pan or loaf pan.

Sift  flour and baking soda and baking powder , mix in salt.

In another bowl, whisk together sugar eggs, cinnamon and dry ginger.   Add in  pumpkin puree, water,  oil/ melted butter.

Add in pumpkin  mixture to the dry ingredients,  stir until well incorporated.

Spread evenly  into prepared pan, bake for  50-60  minutes or until a skewer inserted comes out clean.

Cool in the pan 15 minutes, transfer onto rack to cool.
