A popular hot and spicy sauce   made of  coarsely blended fresh red chili. onion then fried in oil until fragrant.

How to make Sambal Balado is popular in Indonesia, Malaysia and Singapore.

It is often put atop of fried vegetable such as brinjal, tempeh, chicken. seafood  or even eggs.  These item have to be fried before adding the sambal balado,

You may add ginger, garlic and turmeric to the chicken, meat or seafood before frying them,

I have added few bird's eye chili to make it extra spicy or reduce  the seeds of the chili  if  you want a milder version.

HOW TO MAKE SAMBAL BALADO
Serves    10

10 fresh red chili
5 red  bird's eye chili (optional)
3 medium onion slices
salt  to taste
3 tablespoon oil
Juice of one lime

DIRECTIONS

Coarsely blend item 1-4.

Heat the oil, once hot add in blended item.

Stirring until oil floats on top.

Remove from heat.

Add in lime juice, stir well.  Add more salt if needed.

I'd never heard of this before, but it looks good. Somehow I'm thinking this would be great on rice too, but then tend to mix rice with almost anything anyway...
