JACKFRUIT QUICK BREAD RECIPE

An easy recipe of quick bread using tropical fruit, jackfruit.

As I have a balance of jackfruit, am thinking what to make out of this  fruit  which  was rich in dietary fiber, minerals and antioxidants.

Jackfruit has a  intoxicating aroma  and a seed,  Before baking, Jackfruit Quick Bread,  remove  the seeds then chopped into small chunks.  I only used a cup since that was what I have.

Also opt for lesser sweet version by adding half a cup of sugar.  The batter is a bit thicker but don't worry it baked to perfection in 50 minutes flat.   You may check the  Jackfruit Quick Bread  after 50 minutes using a cake tester.

If you;re a vegan, replace butter with oil,  and  eggs with  2 mashed banana or 1/2 cup unsweetened applesauce.

If you like nuts, add about half a cup of chopped walnut or pecan.

JACKFRUIT QUICK BREAD RECIPE
Servings   :  16

2.5  cup plain flour
1.5  tsp baking powder
1/2 tsp baking  soda
1/2 tsp salt
1/2 - 1 cup  sugar
2 large eggs
1/2  cup milk or coconut milk
1 tsp vanilla
2 tablespoon softened butter
1.5 cup chopped jackfruit

DIRECTIONS

Preheat oven to 170 C and grease a loaf pan.

Whisk together flour,  baking powder, baking soda, salt and sugar in a mixing bowl.

In a separate bowl, whisk together eggs, coconut milk, sugar  and butter. .

Pour wet mixture into dry ingredients, stir to mix.

Fold in chopped jackfruit stir well.

Spoon mixture into prepared pan, bake for 50-60 minutes or until a skewer inserted comes out clean.

Cool in pan for 10 minutes, transfer onto rack to cool.

Mmmmmm I don't think I've ever tasted Jack Fruit before. I'll have to do some research and see if it sells or grows here in South Africa. The way you described it sounds so intriguing

Looks good, I know of Jackfruit as a popular vegetarian alternative to pulled pork so it's interesting to see it cooked in this way.
