Telur Goreng Asam / Fried Eggs in Tamarind Sauce  is one of the quickest yet the tastiest dish you could prepare to serve with piping hot rice.

It has spicy, tangy and slightly sweet taste using just few ingredients.   You can increase the chili for more heat and also more water if you need extra gravy.

The eggs could be soft yolk or fully cooked as per your liking.  Indeed Telur Goreng Asam / Fried Eggs in Tamarind Sauce is simply the best that called for extra plate of rice!  You don't need any other side dishes to enjoy your meal.

TELUR GORENG ASAM / FRIED EGGS IN TAMARIND SAUCE

Serves 2

3 eggs

1 big onion sliced

1 red chili sliced

3 bird's eye chili sliced

1 clove garlic minced

1 tablespoon tamarind paste + 1 cup water

1 cups water or more if required

salt and sugar to taste

oil for frying


DIRECTIONS

Heat oil in the pan,  fry the egg one by one,  if you prefer soft egg yolk, remove from heat once the egg white is  set.   Remove to a plate. Extract tamarind juice from tamarind paste and water.

Using the same pan, add oil and fry the onion and chili until translucent.  Add in garlic.

Mix in tamarind juice and water, bring to a boil.  Add salt and sugar to taste.

Pour over fried eggs, enjoy.

In America tamarind is not that well known. However, my husband's family is from Europe and they use it in many dishes. Your simple recipe looks delicious.
