Another quick way to enjoy your breakfast without spending hours making it is to make this Sheet Pan Pancake with cranberries.

From this basic recipe, you can create few variations by  changing the topping.   You may choose one of these:

Sliced banana and chocolate chips
Swirls of strawberry jam with sliced strawberries
Blueberry, raspberry or mango

If you're not a fan of sweet thing.opt for savory ones like chicken, bacon or medley of  vegetables

This Sheet Pan Pancake with cranberries is also egg free, adjust the sweetness to your liking.  Make it lactose free by using soy or coconut milk in place of milk.

SHEET PAN PANCAKE with cranberries
Servings   4-6

1 cup plain flour
1 cup whole wheat flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
4 tablespoon sugar
2 tablespoon canola oil
2.5   cup milk
2.5   tablespoon vinegar

TOPPING
1/2 to 1 cup   cup dried cranberries

DIRECTIONS

Whisk together item 1 to  6 in a mixing bowl.

Grease 9 x 13 in rimmed pan and preheat oven at 200 C for 10 minutes.

Whisk together vinegar and milk.  Let it sit for 5-10 minutes. Add in oil.

Add wet ingredients to flour mixture.  Stir  until well combined.

Pour batter into prepared pan,  tap pan few times to even out and flatten the batter.  Sprinkle with cranberries.

Bake for 20 minutes or until a skewer comes out clean.  Cut into squares to serve.

Serve pancake with maple syrup  and whipped cream if desired.

Ahhhhh my daughter is going to love this one. We have a tradition at home where she makes us pancakes every Sunday morning for breakfast, so your recipe will put such a different spin on the traditional round version. And she won't have to flip them either ;-)
