EGGLESS ORANGE BANANA CAKE

I love  to add fruits or fruit juice to my cakes and bakes.  This  Eggless Orange Banana Cake  has a lovely flavor. It was so easy to whip up.

Made with freshly squeezed orange juice and  used  two medium size banana as an egg  substitution.

Sometimes all you want is a simple cake. Feel free to decorate it as your wish but I like it plain with a cup of tea. You can also sprinkle  icing sugar on top.

EGGLESS ORANGE BANANA CAKE
Yield    :    1-8 in  Loaf

1 1/2 cup  all purpose flour
3/4  cup sugar
125 g butter softened
1/2 tsp baking powder
1/2 tsp baking soda
1 tablespoon orange zest
2 medium banana mashed
1/2 cup freshly squeezed orange juice

METHOD

Preheat oven @ 175 C, lightly grease 8 in cake pan. You can also use loaf pan or 8 in square pan.

Sift together flour, baking powder and baking soda in a mixing bowl.

In another bowl, cream butter and sugar, mix in orange juice, orange zest  and mashed banana.

Add wet ingredients into flour mixture, stir until well combined.

Scoop mixture onto prepared pan.

Bake for 35-40 minutes or until a skewer inserted comes out clean.

Cool in pan for 15 minutes, transfer onto rack to cool.

This sounds yummy! At first the combination of orange and banana reminded me of one of the baby food flavors my daughter used to eat - Banana Orange Medley. This recipe seems pretty easy and I bet it tastes just as good. I know what I'll be making when I get back from vacation.
