This is the cookies I used to buy from Indian tea stall stored in a glass jar but much bigger in size. Suji Cookies is  pleasantly buttery and  slightly crunchy  biscuit.

Made of clarified  butter (ghee), flour and baking soda, it is quite simple to prepare. The only time needed is rolling them into tiny balls.

If you want softer cookies shorten your baking time and they will remain white even after baking. Feel free to  roll them to your desired size but place them  1 in apart since they will expand a little while baking.


SUJI COOKIES
Yield   :   35 cookies

1.5 cup all purpose flour
3/4 cup  clarified butter
1/2 to 3/4  cup fine sugar
1 teaspoon baking soda
1.4 teaspoon salt

METHOD

Melt clarified butter using low heat, cool.

Sift flour, soda and salt in a mixing bowl. Add in sugar.

Now combine clarified butter and flour mixture and forms into soft dough.

Pinch dough into 1/2 in ball and flatten slightly, Place balls  into baking sheet 1 in apart. Preheat oven @ 175 C.

Bake for 15 minutes in a preheated oven. The color will remain white after baking but the bottom is light brown in color..

Gently remove onto rack to cool completely.

Store in an airtight container.

Ah, where is the suji? Suji is Urdu for semolina. And you are calling these suji cookies. I think your recipe should be part suji, part flour. No, not upset, as I do make suji cookies, and just thought you should know that you are missing the suji. Hope you find it. It will be a great cookie.
