This chicken is cooked in a spicy red sauce that was a popular choice here. Ayam Masak Merah / Chicken in Spicy Red Sauce got its color from chili paste, chili sauce and tomato sauce. .
Before you start, prepare the chicken by coating with turmeric and salt then fry until half done.
Also get ready those ground ingredient. Cut dried chili into small pieces, wash and boil . Drain then grind into smooth paste together with ginger and garlic.
Have added a cup of water but this depends how thick you want the gravy to be.
You can use white sugar instead of brown sugar as brown sugar makes this Ayam Masak Merah / Chicken in Spicy Red Sauce a bit dark in color..

AYAM MASAK MERAH / CHICKEN IN SPICY RED SAUCE
Serves 10
1 whole chicken cut into 12
1 tsp turmeric powder
oil for frying
salt to taste
GROUND
30 dry chili cut and boil
1 in ginger
6 cloves garlic
2 big onion sliced
1 stick cinnamon
2 cloves
3 cardamom
4 lemon grass bruised
3 tablespoon oil
2 tomato chopped
1/2 cup chili sauce
1/2 cup tomato sauce
2 tablespoon sugar or to taste (I used brown sugar)
1 cup water
coriander leaves for garnish
DIRECTIONS
Cut chicken into small pieces. Wash and drain then coat with turmeric and salt. Fry until half done, drain well.
Cut dry chili, wash and boil, Grind this together with ginger and garlic,
Heat 3 T oil in a heavy bottomed pan, add in lemon grass, cinnamon, cardamom and cloves.
Add in onion, fry until soft then mix in ground ingredients. Fry until oil floats on top.
Add in sauces, sugar, tomato, salt and water. Bring to a boil.
Add in chicken and salt, Simmer until chicken is fully cooked. Remove and serve. Garnish with coriander leaves.
