BAKED YEAST DOUGHNUTS

I really love baking doughnuts because I can easily avoid some calories and fat. This is a great make ahead  recipe. You can get the dough mixed up the night before and let it rise overnight in the refrigerator.

The baked yeast doughnuts make from ingredients you probably already have. Using yeast dough these little treat involve no deep frying but still taste delicious.

Make them more exciting and fun with variable glazes/toppings, such as chocolate, nuts and sprinkles, vanilla, caramel or maple. They are such a delight for the whole family!

BAKED YEAST  DOUGHNUTS
Yield   :    10 doughnut

2 C all purpose flour
50g melted butter
1.5 tsp instant yeast
1/2 C evaporated milk
1/4 C hot water
1 tablespoon sugar
1/2 tsp salt

COATING
1/4 C melted butter
1/4 C sugar
1 tsp cinnamon

METHOD

Combine melted butter, milk and hot water in a small bowl.

Mix together flour, yeast, sugar and salt in a mixing bowl.

Add milk mixture to the fry ingredients, forms into soft dough.

Knead by hand on floured board for 8 minutes until smooth,

Transfer into covered and oiled bowl, let rise until doubled for 1.5 hours.

Punch down dough, roll out about  1/8 in thick. Cut out into round using 2 in cookie cutter or use doughnut cutter if you have.  Using small cutter to make a hole. Transfer doughnut onto baking sheet.

Let the dough sit for 45 minutes.  Towards the end of rising time, preheat oven @ 190C.

Combine sugar and cinnamon for coating.

Bake 10-15 minutes until golden brown.

Remove from the oven, brush with melted butter and roll in cinnamon  sugar.

Cool on rack.

Yum - those donuts look delicious. They make my stomach rumble for food. Guess I better go find something to appease it since I don't have one of those donuts.

These look amazing! I had to try them, I made them this morning, though I was really lazy and put everything in the bread maker on the dough setting, then pulled out out to cut the dough and let it have a final rise. They are absolutely delicious! Will be making them again! Though you definitely need to have them hot and fresh from the oven to have them at their finest! Thanks for the recipe!
