It's time for a treat that won't make you feel guilty, lightly sweetened, this dessert looks as good as it looks.

I'm using canned peaches but if you can get hold of the fresh ones, it would be much better. Make sure you drained the peaches pretty well before adding it to the batter.  If any of you want to switch out the peach slices for some other fruit, this cake would work with pears, plums and apricots.

An incredibly moist and light cake baked  without  egg. Everyone who has eaten it, loves it!

EGGLESS PEACH CAKE
Yield    :    7 in loaf

1.5 cup all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 to 3/4  cup brown sugar
1 cup diced peaches, canned
3/4 cup plus 1 tablespoon  whole milk
1/4 cups melted butter/oil
1 tsp vanilla extract
1/4 tsp salt
peach slices for topping

DIRECTION

Preheat oven @ 175 C and lightly grease 7 in pan.

Sift flour, baking powder and baking soda in a mixing bowl.

In a separate bowl, combine milk, melted butter, salt and sugar.

Add milk mixture to dry ingredients, mix in diced  peaches and vanilla. Stir until well incorporated.

Scoop batter onto  prepared pan, level top and scatter with sliced peaches.

Bake for 40-50 minutes or until a skewer comes out clean.

Cool in the pan for 10 minutes, transfer onto rack to cool.

This looks simple and delicious. It also looks like it will freeze well. Because it's just me and my husband, I like to freeze 1/2. Can't wait to try it. THANK YOU SO MUCH! EUREKA! I have been looking so long for the perfect cake without eggs for my kids, and I have been trying loads of recipes but nothing was as sgood as this one! Very moist and soft, without being to spongy! If you don't tell anyone it doesn't have eggs you wouldn't notice!

I tried this cake today and its toooo mushy from the inside... i baked it for 50mins n the outside is very well done... a minute more n it wud burn... but frm d center its too mushy... feels like its uncooked... though i feel its bacause of the liquid from the fruit. What should i do to avoid this next time?!?

Hi Radhika thanks for trying my recipe. So far none encounter such a problem, I have another reader named Serena had tried it successfully. I think, your should properly rinsed and drained the peaches or dab with kitchen towel before adding it to the dough. Do let me know if you try this again..

This recipe looks like it would turn out a really moist cake that is not overly sweet. With canned peaches as an ingredient, it's possible to make this cake all through the winter months, too.

I should have more time on my hands soon, so I plan to try this recipe. My husband loves peaches, but gosh, have you seen the cost lately? My recent grocery order showed them at $1.25 a piece! I couldn't believe it. Hope you have a lovely weekend!
