This recipe is a straight forward one and ready in a matter of minutes. You can use a mixer or just a whisk to make this Blueberry Banana Cake.
Really delicious, I love this combo , this cake was complete hit with kids and visitors/ Blueberry adds a juicy fruitiness and a subtle flavor, not overpowering by banana.
BLUEBERRY BANANA CAKE RECIPE
Servings : 16
1.5 cup plain flour
2 tsp tsp baking powder
3/4 cup sugar
1/2 cup melted butter/oil
3/4 cup mashed banana
3/4 cup blueberry washed
1/4 cup milk
1 tsp vanilla essence
3 eggs
1/2 tsp salt
Preheat oven @ 170 C and grease 7 in cake pan. .
Whisk together flour and baking powder in a mixing bowl.
In a separate bowl, beat eggs and sugar until fluffy. mix in butter/oil, milk, banana, salt and vanilla essence. Beat until well blended.
Add banana mixture to dry ingredients, stir until well mixed.
Spoon batter into prepared cake pan
Bake for 50-60 minutes or until a skewer inserted comes out clean.
Cool in pan 15 minutes, invert onto rack to cool.
