A clever way to use those stale bread is to turn them into dessert or savory meal.   I made this Fantastic Savory Bread Pudding loaded with vegetables.

At last, my wholemeal bread loaf transforms into a healthy food that my family enjoy.

Added capsicum, corn kernel  and tomato but other veggies would work too.  Heat for one minute on high in microwave for the frozen corn before adding them to the bread mixture.

FANTASTIC SAVORY BREAD PUDDING RECIPE
Serves   :  4-6

12 slice bread cubed
2 cups milk
3 eggs
salt to taste
2 medium onion chopped
1/2 cup capsicum chopped
1/2 cup sweet corn cooked
2 garlic chopped
2 green chili chopped
1 tomato chopped
2 tablespoon oil
black pepper
butter to grease the pan

DIRECTIONS

Heat the oil, add in onion, fry until it turns soft.

Add in garlic, capsicum, green chili, black pepper.  Cook for 5 minutes.

Mix in corn and tomato.  Stir for 2 minutes.  Add more salt and pepper if needed.  Remove and cool.

Soak cubed bread in milk for 10 minutes.

Beat eggs with salt and pepper.  Pour into bread mixture.

Reserve some of cooked veggies for topping, add the rest to the bread.  Stir well. .

Grease 8 x 8 in pan and preheat oven at 180 C for 10 minutes.

Spoon  bread mixture  into pan, top with reserve veggies.  Bake for 40 minutes or until a skewer inserted comes out clean.
