This simple Homemade Pumpkin Hashbrowns was made with grated pumpkin using box grater with light seasonings for a healthy and yummy breakfast or brunch.
Adjust the seasonings according to your preference. Feel free to add garlic and herbs fresh or dry to enhance the taste of this Homemade Pumpkin Hashbrowns,
You could also make one large hashbrowns instead of individual patty. Just scoop the pumpkin mixture onto the pan, flatten to shape into a big disc. To flip without breaking, transfer it to a plate then put it back in a pan, uncooked part down.
This recipe yields 5 hashbrowns or patties. Serve them with ketchup, mayo or yogurt.
Yield : 5 patties
2 cups peeled and grated pumpkin
1 medium onion grated
4 tablespoon rolled oat
salt and pepper to taste
1/2 tsp chili powder
1 egg
oil for frying
DIRECTIONS
Combine together all ingredients except oil in a bowl. Heat 4 tablespoon oil, drop 3 tablespoon of pumpkin mixture onto the pan, flatten each into a patty. Place 3 patties at a time, fry until golden using medium heat. Flip and cook the other side. Serve with ketchup, mayo or yogurt.

I have plenty of pureed roasted pumpkin which has been frozen. Can I use this or does the pumpkin need to be freshly grated. It sounds delicious and I would love to try it. I need to use pumpkin in different recipes other than just desserts. I am doing the same with grated zucchini from my garden. It was always frozen to be used in a sweet bread dessert, but now I use it as a fritter. Thank you for sharing your recipe.
