IKAN MASAK ASAM REBUS aka FISH IN HOT SOUR SOUP is a favorite of my parent.  It is very healthy as no oil is used.  The fish is cooked in tamarind and chili soup, it has tangy, spicy and slightly sweet taste.

You can use almost any fish but common one was mackerel, tuna, yellow stripe scad (selar kuning)  but I choose red snapper.

Before you start cooking, make sure to clean your fish properly. First remove the balance of scales from the body if any, the easiest way was to ask the fish seller to do that for you.  Then take out the gills, fats and organ otherwise you have a fishy stale smell after it is cooked.

Remove blood clots at the back bone of the fish.  It is not visible as it was covered with a membrane.  Slit open this white membrane and dig out the blood clots. Wash this with running water.  After that I soak my fish for 10 minutes in which 2 small lime juice was added, drain and coat with turmeric and salt.

Substitutions :   5 fresh red chili and 3 bird's eye chili instead of blended chili

1 teaspoon of shrimp paste (belacan) instead of dry anchovies

2-3 pieces asam gelugor  (dried tamarind slices) instead of tamarind paste

1 inch turmeric root instead of turmeric powder

Ikan Masak Asam Rebus tasted really wonderful if you cook with fresh fish and now this dish becomes my favorite too.

MY SAMOSA STORY

Am so tempted to make my own  Samosa since my feeds are flooded with it.  Made Baked Samosa before but my kids requested the fried version.  The pastry was almost the same from one another but the filling might differ slightly. 

I have used potato, green peas, carrot, chili powder, turmeric, cumin seeds, ginger, chat masala and garam masala for My Samosa Story.   I fold the pastry differently. 

Roll out the pastry into circle, cut 1 cm strips lengthwise on half of the pastry, wet the the half with water, fold into two.  Stuff the filling at the center (strips one down), fold into thirds to get triangle shape. Wet the edges and seal properly,  this is ready to be fried until golden. 

My Samosa Story did not disappoint, it turned out golden color and  insanely delicious.  I have a tip for you for getting smooth pastry.  Fry the samosa using  medium heat  and the oil should not sizzle,  also do not crowd the pan.

Eid Mubarak to all who is celebrating.  May this occasion bring joy and happiness to you and family! 

Biryani is one of the famous dish in the world.  It needs no introduction.  There were wide variations of Biryani.  Some used chicken, mutton or seafood.  Also available in  vegetarian version.

I have tried Mutton and Chicken biryani for the past years. As requested, this year I tried Amazing Beef Biryani.  There were few steps for cooking this biryani.  First marinate the meat with  yogurt and spices before proceeding.  Secondly cook the meat using ready made biryani masala until it turns tender then boil the soaked rice in salted water and whole spices.  Final step, layering  the rice with cooked beef, drizzle  yellow food coloring, fried onion and chopped cilantro/mint leaves before we slow cooked the biryani for 10 minutes. 

Amazing Beef Biryani is being served for Eid together with okra raita.  It was super duper hit with family and relatives.  The meat almost  fall off the bone, so tender and flavorful!

SPICY AND YUMMY CHICKEN CUTLET

SPICY AND YUMMY CHICKEN CUTLET

500 g boneless chicken ground
1 tsp ginger minced
1 tsp garlic minced
1 tsp chili powder
1 tablespoon whole cumin
1/2 cup chopped cilantro
2 big onion chopped
1/2 tsp garam masala
1/2 cup crushed cornflakes
oil for shallow frying
salt to taste

DIRECTIONS

Coarsely blend boneless cut chicken with cornflakes using a food processor.

Add in the rest of the ingredients except oil  and run the processor
just to combine the ingredients.

Remove chicken and place in a bowl,   Scoop the chicken to shape into  cutlet.

Heat oil in a frying ball, slide 4-5 cutlet at a time.  Shallow fry in oil over medium heat  for 4 minutes on each side or until golden brown,

Remove on an absorbent paper, serve with sauce or chutney.

Date Bread (Eggless)   is the easiest  loaf  of  yeast bread you will ever bake. This recipe produces a soft crust and moist center using the most basic ingredients that can be found in most kitchens.

Instead of raisin, I had used chopped dates and this is also an egg free recipe. The dough is easy to handle and it takes about an hour and half to rise. 

This Date Bread (Eggless)   is wonderful. It smells so good while baking. The texture is perfect and just a right size for my family. It is a favorite bread for many families because it can also be eaten as healthy snack.
