AYAM PANGGANG KICAP / GRILLED SOY SAUCE CHICKEN RECIPE

Chicken is always a favorite for kids as well as adult.  This Ayam Panggang Kicap/ Grilled Soy Sauce Chicken  uses 2 method of cooking.  Firstly on stove top then  ends with grilling.

You can use chicken thighs or breast but make sure you make a deep cut  to ensure the spices  get into the deepest part of chicken itself and  they would cook through  perfectly.

Lemon grass (serai) adds a beautiful fragrance to this Ayam Panggang Kicap /Grilled Soy Sauce Chicken . We only use  the white part but you may omit if not available.

It uses fresh red chili that can be adjusted to your liking.  The ground ingredients and spices  are fried until fragrant, After that chicken is being added with water, soy sauce (added 2 tablespoon)  and sugar.

Once the water is evaporated, transfer into oven proof dish for grilling till brown,.

AYAM PANGGANG KICAP /GRILLED SOY CHICKEN  RECIPE

1.25  kg chicken pieces rub with salt, washed and slit
1 big onion sliced

GRIND TO A PASTE

1 stalk serai (lemon grass) cut
1  in ginger slice
4 cloves garlic
9 red chili
6 shallots
few spoons of water if needed for grinding

MIX WITH GROUND INGREDIENTS
1 tsp turmeric powder
2 tsp coriander powder
1/2 tsp black pepper

2-4 tablespoon dark soy sauce
300 ml water
1 tsp sugar
salt to taste
4 tablespoon oil for frying

DIRECTIONS

Heat the oil, add onion,  Fry till golden.

Add in ground ingredients and spices.  Fry until fragrant.

Add chicken pieces, stir until well coated with spices.

Add water, soy sauce, sugar and salt, bring to a boil and simmer for 20 minutes.

Remove from heat, put in oven proof dish with gravy and grill till brown.
