After long time, I have baked this Light Fruit Cake for my family. As requested again, by my son, am going to bake his favorite cake.
Always prefer less sweet and light fruit cake and this Moist Light Fruit Cake has a right balance of mixed fruit and sweetened with brown sugar.
It is quite easy to make and a real crowd pleaser. You can eat it anytime of the year not only for Christmas.
Used store bought dry fruit mix or mix your own dried fruit, coated the fruit mix with flour before adding to the flour mixture.
As am running out of fruit juice, have added half a cup of isotonic drink.
For eggless version, replace an egg with 1/4 cup plain yogurt or 1/4 cup apple sauce.
Moist Light Fruit Cake bake perfectly for flat 45 minutes and my son can't wait to devour after it came out of oven. My family gave a thumbs up to this beautiful cake.
MOIST LIGHT FRUIT CAKE by treatntrick
Yield : 12 servings
1.5 cups plain flour
1.5 tsp baking powder
1/2 cup brown sugar
1/2 cup (1 stick) softened butter
1.25 cup dry fruit mix reserve some to sprinkle
1/2 cup orange juice/isotonic drink
orange zest from one orange
1/2 tsp salt
2 large eggs
DIRECTIONS
Preheat oven at 170 C (338 F) and grease 8 in cake pan. Sift flour together with baking powder. Coat 2 tablespoon of flour with fruit mix, remove any lumps.
Cream butter and sugar until fluffy. Beat in one egg at a time, add orange zest and salt. Mix in flour little by little. Add in fruit mix together with juice/drink, stir until well incorporated, scoop mixture into prepared pan. Level top with spatula, tap the pan twice. Sprinkle top with fruit mix. Bake for 45 minutes or until a skewer inserted comes out clean. Let sit in the pan for 15 minutes before transferring onto rack to cool completely.

I have a fruit cake recipe that was one of my mum's favourites where she would boil the fruit with water and marmalade before making the cake. I guess with the juice you add here the effect is similar. I love trying new cake recipes so I'll give this a try.
