This recipe originates from one of cookery shows aired every morning. Though there are  various method to cook this pineapple rice but this one suits a vegetarian.

You can easily adapt  this recipe to be one pot meal by adding chicken, egg or seafood. The pineapple chunks  give this dish a unique taste that everyone will love. Was pleasantly surprised how good it was!

Baked Banana Doughnuts Recipe @

It has been months we had doughnuts. As requested, I have  baked this treat made with yeast and mashed banana. These baked ones are healthier option, will help you to reduce fat and calories at the same time.

Numerous times, I have added mashed bananas for making cakes and breads. this time my  bread turned out  softer and tastier.  Besides sugar topping, you can make these guilt free treats for the kids with variable toppings.

During festive occasions my mum used to bake this peanut cookies without fail.

It is usually made with corn/canola  oil but now I tried using butter.  They were fantastic nice and crunchy but not too sweet. I can't believe how easy they are to make.

To all my Muslim friends, wishing you a Happy Eid, may you be blessed with happiness and success always!

Yield    :    90 cookies

1 1/4  cup  all purpose flour
1/4  cup  cornflour
140 g  softened butter
3/4  cup  fine sugar
1  1/4  cup  roasted ground  peanut


Cream butter and sugar.

Add in both flour then add the peanut.

Mix to combine. Dough is ready if you can easily shape it into smooth ball without crack if not add  a tablespoon of butter.

Roll out dough in between plastic sheet, cut out using cookie cutter.

Place the cookies onto baking sheet, decorate as desired.

Bake 20 minutes @ 160C in a preheated oven.

When completely cool, store in an airtight container.

Fruit Tart Recipe @

These little tarts  are one of the seasonal favorites which make their  annual appearance on festive occasions such as Hari Raya Puasa (Eid ul-Fitr)  and  Chinese New Year.

Commonly stuffed with grated pineapple but I had made slight change by filling them with pitted dates. You can also use raisin if you want.  I'm very pleased with the result also they were well liked  by my family.

The trickiest part is  getting the perfect pastry, if too stiff, it tends to crumble. Don't add too much water or the pastry will be hard, add in a tablespoon at a time.

A  quick and easy cake made with semolina or cream of wheat. This Eggless Semolina Banana Cake could be enjoyed  anytime of the year.  This is a different version of semolina cake that was low in  fat and egg free.

In case you're allergic to dairy, feel free to substitute milk with non dairy milk like almond milk, soy milk or rice milk.  Although it wasn't super soft as a normal cake but it was moist due to the addition of mashed banana.  The Eggless Semolina Banana Cake is now becomes our favorite,   I hope others find it delicious too!

I'm so excited to try this Peanut Butter and Jelly Rolls  or make up my own version. Instead of turning it into a loaf  incorporated with peanut butter and jelly, have shaped  them  into rolls,  filled with peanut butter and fruit jam.

Have so much fun baking this delicious combo. Actually you can fill  with anything including cream or butter. In every bite the rich  peanut butter flavor is complimented by delicate sweetness from the jam.

In order to get a perfect strips, have used a pizza cutter. It works like a charm.

These No Bake Energy Balls are delicious and more nutritious than anything you can buy from the stores.

Made with rolled oat with no added fat and wheat free too.  If you're using a soft pitted dates, soaking could be avoided.  Add a required amount of hot water to the oat mixture just to bind them. We didn't even use a blender, just chucked  it all  in a bowl and mixed by hand.

This is a basic recipe of no bake balls, be adventurous and create your own combination that suits your need.

Tomato Roti

This is a flat bread using wheat or whole wheat flour, flavored with ground coriander, chili powder, cilantro and of course fresh crushed tomato and tomato sauce. It is a healthier alternative for wholesome and filling meal if taken along other side dishes containing veggies, lentils or meat.

There is another method to prepare this roti by cooking the tomato and all the spice separately then added to dough.  Either way you choose, it is still turned out fabulous.

I didn't add any liquid to the dough since crushed tomato contains some juice but  if it is still crumbly add the water by a tablespoon at a time.

The dough is made up with a least oil and let  rest for 20 minutes. It is then rolled into flat round disc, fried on a griddle until brown spots appear on both side. From this basic dough, you can create a lot more variation of this healthy roti.

I love to experiment with simple bread dough by transforming them into a delectable and impressive creation.

With this in mind, I had coiled  the apple slice and dough strips  into a spiral.  From this Spiral Apple Bread recipe I got 2-8 in loaf and these were just sufficient for our small family.  You can spread the icing over the top but preferred a little coat of melted butter then sprinkle with some sugar.

These would definitely make a lovely addition to any breakfast party or may be a special treat for someone special!

Eggless Apple Cake Recipe @

Take a bite of this Eggless Apple Cake that are loaded with cubed apple. It is also low in fat when compared with other recipes found on the net.

This is just too easy to make. Great for when you want something without  too much effort. Focaccia Recipe @

I love flat bread with a good, slightly burnt edges crust that was crisp and chewy at the same time. This focaccia  is one of my favorite bread.

If you have mastered making your own pizza, definitely you won't encounter any problem baking  this focaccia.  You can expand this recipe by adding various toppings on the bread  and try a lot of different combinations. In my case, I have thrown in a handful of raisin to the dough. The raisin is added after proofing but you can also include them at the time of kneading, either way it  works but most importantly the raisin should not be exposed, you do not want them to be bitter and burnt.

The focaccia will keep at room temperature for 2 days and freeze well up to 1 month.

Sardine Recipe  @

For many years, I have abstained myself from taking any dish with canned sardine. But that had changed  ever since I have tasted a fantastic recipe cooked by our chef in my previous workplace.

For the recipe below, I had used canned sardine in tomato sauce and lemon juice to get rid of its unpleasant smell.  It turned out fabulous and quite pleasing to our palate though it can't never be the same from what I had tasted before. You may discard the sauce and use only the  fish but this is personal choice.

They are great serve with rice,  paratha, naan or bread.

Caramelized Onion Flatbread

My son is not a fan of dinner rolls of flatbread but crazy about stuffed or filled bread with sweet filling. So I decided to whip up this flatbread with caramelized onion for myself.

Don't look down on this flatbread. They are amazing! The caramelized onion does wonder to this simple  bread, The caramelized  onion produces a sweetness and unique flavor you'll  definitely enjoy eating.

For great looking bread, when sauteing the onion, remove from heat when they are about to turn brown. The onion will continue to brown while baking.

Cookies are a great accompaniment to your coffee or tea. They come in various flavors and shapes. I whipped up these this afternoon using chopped dates.

These Date & Ginger Cookies proved popular with my guest and family. Loved this recipe, so quick and easy also very low in fat too. It was a definite winner with spicy flavor from ground ginger.

They are wonderful just as it is but you can dress them up with colored sugar or sprinkles if you want.

Stir fry is an easy way to bring out the flavor of the vegetables and it is a healthy way to eat them. I realized that you can stir fry pretty much any vegetable, carrot, spinach, potato, french bean, long bean and many more with the same method with fantastic result/

300g cauliflower cut into small florets
1 carrot sliced
1 onion chopped
2 red chili sliced
1 tsp mustard seeds
1 sprig curry leaves
2 tablespoons oil
1/4 tsp turmeric powder
salt to taste

The idea for stuffed bread was inspired by the bread we had at the nearby bakeries. A little stuffed bread is exactly what I want as a snack in the afternoon.

I love to re-create a bread recipe with different toppings or add on.  Bread baking is a satisfying and challenging project I truly enjoy.

For this recipe, the filling is sandwiched  in between the dough.   The filling will be different everyday, based on what's in season and its availability in our pantry. The possibilities  are endless. You can even make half the bread savory and the other half sweet.

 Treat your family with this classic favorite that are easy and whole grain seekers will appreciate, the rolled oats. This is the most requested oat cookies I've ever made. Using rolled oat and breakfast cereal (cornflakes, shredded wheat, cheerios, etc)  or only rolled oat, these are great to work with. They hold their shape well while baking, not much spreading at all. You can  lightly crush the  oat/cereal if they are tough or s too big.

They are wonderful. These cookies came out just crisp enough to be absolutely delicious. Not too soft, not too crisp. Will be keeping this recipe for my future cravings of crunchy cookies!

Chunky Tomato Soup Recipe  @

Nothing beats slurping up a bowl of warm tomato soup that is super easy to prepare from your own kitchen.  It tastes so much better than the store bought versions.  Transform this soup with a little twist by adding some of your favorite herbs or spices. Try making it thick or thin, chunky or smooth, the way you love them  most.

My method involves  a quick and much easier way  eliminating the blending process but this is a personal choice. I prefer my soup in its original state, love to bite into a chunky bit of tomato in them.

Have added  some chili powder for extra hotness also for  its  beautiful color. This can easily be replaced with freshly ground black pepper if the chili powder isn't available in your kitchen.

Braided Apple Bread Recipe @

This  Braided  Apple Bread looks insanely good yet  really easy to make.  You can use any sweet dough  or dinner rolls recipe for making this braided bread.  It can be shaped according to your preference but most common shape is simply an oblong loaf.  They can also be knotted or twisted into complex shapes.

The dough used in braided breads vary. Some are rich with eggs or butter and they may be brushed with egg for a glossy finish.  They can also be mixed with raisin, nuts, dried fruit or spices for added flavor.

Feel free to choose your own  filling by substituting with your favorite jam or preserves. The stuffing can be made  either sweet or savory too. Before adding more brown sugar to the apples, have a bite to see whether you need extra dose of sweetness, it all depend on apple you'd use.

Chewy  and wholesome, this Healthy Breakfast Bars make a super satisfying snack. They bake up in a snap without leaving home.

These bars were delicious and not too sweet. If you desire, you can add some brown sugar to sweeten them up a bit They were  perfect to my liking so it really didn't need to be any sweeter. It is  great for those  with food allergies since there is no wheat, butter  and egg  in the recipe.

A fantastic  dish  that offers almost a complete meal using moong dal and rice. There are various ways to cook them. some added ground pepper or other spices as well.

This recipe was perfect. My family raved about how good it was. Perfect blend of seasonings comprise of mustard seeds, whole cumin, ginger and chili powder makes this rice so appetizing that you can eat them without any gravy. I honestly didn't expect them to like it so it was a great surprise! Even the color made it fun for them to eat.

Garlic Naan Recipe @

A  staple in most West, Central and South East Asian countries . Naan has also become popular in other parts of the world  especially in Arab states, Europe and North America. This  leavened flat bread  is cooked in tandoor by most North Indian restaurant around the globe.

Since tandoor is unavailable in most homes, the best alternative is  to bake them  in an  ordinary oven or stove top.  Naan comes in different flavors, by varying the toppings.

The recipe below uses only 3 cloves of garlic but you can add more if desired and  I have  cooked  them over the stove top without any topping.  If  topped with  one of the following, cilantro, sesame seeds, nigella seeds, chopped onion or minced garlic, it certainly  improve. the flavor. Below are a few tips for perfect naan:

1. Roll out each naan about 1/4 in thick and not very thick. It will expand during cooking.

2. Cook each naan on preheated cast iron skillet or heavy bottom  pan  using medium heat.

3. Rotating the naan using your hand or with the help of folded dish towel ensuring even cooking.

4. Flip the naan more than once to obtain nice golden color.

Chewy, tender and absolutely delicious paired with spicy gravy.  My son gulped all 4 pieces at one sitting!
