AMAZING APRICOT DATE BREAD

My family always look forward to having dessert for tea-time, either  cake, bread or cookies.   For me, I love to bake a quick bread as it was quick, easy and simple steps.

For long time, I have not stepped into supermarket to purchase my baking products. As am looking for what to bake, found a tub of dried apricot and date so these are going to be my baking adventure this week.

Amazing Apricot Date Bread is loaded with apricot and date, mildly sweetened with coconut sugar,  it contains warm spices of ground ginger and cinnamon.

Easily turns this Amazing Apricot Date Bread into a vegan recipe by replacing butter with vegan butter and an egg with yogurt. So often quick bread  comes out dry but not this bread. It is deliciously moist despite using 2 tablespoon of butter and mouth watering good.

AMAZING APRICOT DATE BREAD

Yield  :   14 slices

1 cup plain flour

3/4 cup whole wheat flour

1.5 tsp baking soda

1 cup chopped dried apricot

1 cup chopped pitted date

1.5 cup boiling water

3/4 cup coconut sugar

1/2 tsp ground ginger

1/2 tsp ground cinnamon

1/2  tsp salt

2 tablespoon softened butter

1 egg

DIRECTIONS

Place apricot and date in a bowl.  Combine soda with boiling water, pour over apricot and date. Whisk together both flour, salt, cinnamon and ginger in a bowl.
Beat butter and sugar, add in egg, add flour alternating with  apricot date mixture .  Pour into greased loaf pan in bake in preheated oven @ 350 F (180 C) for 60 - 65 minutes or until a skewer comes out clean.  Leave in pan for 10 minutes before transferring onto rack to cool.

Yum, this looks so good. I've never made a quickbread with apricots and dates. I definitely love a moist quickbread, though, so I'd love to try this one. #thursdayfavoritethings

This looks yummy!
We always keep a bucket of chopped dates around because my husband is unashamedly addicted. So I would like to give this a try once I get ahold of some apricots.

I love using dates in breads too Nora! I discovered how much I like them a few years ago when I was avoiding table sugar, and boy, oh boy, was I as happy as a lark! YUMMY! Thank you for sharing this recipe.
