This dish comprises of spinach and the mung dhal. Keerai Koothu combination worked so well for this vegetable dish. As you may know, spinach is a good source of iron, niacin, zinc, dietary fiber, vitamin A/C/E/K/B6 and other nutrients, equally moong dal is also rich source of protein, fiber, vitamin C/K, niacin, iron and other minerals.
Combination of vegetables and dhal are very popular in southern part of India. Best eaten with naan, paratha or rice. What you need are:
KEERAI KOOTHU (Spinach with dhal)
2 cup chopped spinach
1/2 cup mung dal soak then boil
1/4 tsp turmeric powder
1/2 tsp cumin seed
3 dried chili
3 cloves garlic
1 tablespoon coconut
1 tsp mustard seed
1/2 tsp urad dal (black gram)
1 onion sliced
1 tomato chopped
1 tablespoon oil
curry leaves
salt to taste
METHOD
* Boil moong dhal, spinach, turmeric with few drops of oil until soft.
* Heat a teaspoon of oil, fry the coconut, dry red chili, cumin seed, garlic and curry leaves, grind to a paste.
* Heat the oil, splutter the mustard seed and black gram. Add onion and fry until light brown.
* Add in tomato and salt, cook until tomato turns soft. Add ground ingredients, moong dhal and spinach.
* Simmer for a few minutes, remove from heat.
* Serve hot.

I never thought the day would come, but I love spinach. Raw, steamed, boiled, any way I can get it. It's so good for you.
We don't eat a lot of red meat, or any meat for that matter, so I'm happy to know that we're still getting plenty of iron from spinach.
