Light Eggless Banana Cake @

Since my banana are over riped, I need to make use of them before they turn really bad. This cake is very light and easy to prepare, just mixing all the ingredients without using a mixer.

It turned out very well. The cake is so yummy and spongy. Since Light Eggless Banana Cake  is quite a large cake, I halved the recipe. Great for a small get-together or as a afternoon snack with your favorite drink.

3 cups cake flour
5 teaspoons baking powder
1 teaspoon bicarbonate of soda
375 ml milk
2 cups mashed bananas
125 g melted butter
1/2 cup brown sugar
1 teaspoon vanilla essence

* Preheat oven @ 160 C. Sift flour, baking powder and soda together.

* Combine banana, milk and butter together. Add dry ingredients gradually into wet ingredient, mix well.

* Pour into greased pan and bake for 20-30 minutes or until a skewer inserted comes out clean.

* Cool on pan for 10 minutes, remove on rack to cool.

Nice cake! I should try making mine in a round pan too. I always only make banana loafs. This looks very yummy!

I love banana anything. Mister eats them for breakfast every morning, but likes them on the slightly green side. Anything past that doesn't get eaten. Needless to say, we end up with lots of ripe bananas. I just throw them in the freezer for use later.

We mostly make cookies with them, but sometimes pancakes. Freezing really intensifies their flavor. And you can use them at your convenience, it's great!

Your cake looks really good and easy to make. I need to make a dessert for tonight and I do have bananas in the freezer so this will be it.
